Raw Apple Oatmeal Squares

Thank you all so much for your feedbacks and comments on Monday’s post. It is so good to hear how many of you out there were able to take my posts as an encouragement to tackle recovery from their Eating Disorder – I am so proud of you. This is seriously the most important thing for me here on FSW – if I can motivate only one person out there to start believing in themselves and fight against the addiction, then the every single hour of work is worth it.

I will figure it out, as always. I will find a solution that will let me get my sleep in and still keeps this blog alive. For now, we stay with the usual schedule, so soak it up.

But now onto some chitchat. Grab a big Caffe Latte as I now do once a day, sit down, read and relax.


Does anyone else understand this refrain as ‘cooookies’ instead of ‘cool kids’? Seriously, I racked my brain as to why the hell someone creates a songtext about cookies.

My day in a bag. 2 Training sets, alllll the food, cosmetics and other important things. On the race bike on my back. The struggle is real.

BagBut hey, it’s recipetime!

Actually, I created this recipe even before christmas (Christmas?! When was that??) – but back then I gave priority to the chestnunt chocolate chunk cookies – which I need to make soon, since they were a success. Though I am not significantly sure if this is a good idea, since it will turn out into Lucie eating all the baking dark chocolate chunks ahead of them meeting the cookie dough. The struggle is real #2.

But now on to these babies – so simple, no bake aka raw, so for all you lazy bums like me, you don’t even need to turn on the oven. You will have a mess on your hands from kneading, but it’s a great excuse to ‘test-taste’, read – throwing copious handfuls of cookie dough down the gullet.

And guess what? These squares are vegan. I know, me baking without eggs is totally strange, but I must say, I liked it and they taste delicious even minus the eggs. Plus they contain a plethora of Superfoods. Not that I would stop loving eggs, now that would be awkward, since I am a chicken. Oh my Gosh, I am so funny.

Ok, probably better to just head on to this recipe.




    125g Rapunzel Cashew Creme

    80g glutenfree oats

    1 apple grated

    50g coconut flour

    50g grated coconut

    50g unsweetened cacao powder

    50g chocolate chips


    Mix the flours, grated coconut, cacao and oats.

    Add the apple.

    Stir in chocolate chips and cashew creme – mix well and knead until all ingredients are well combined.

    In a square pan, spread the dough and let harden in the fridge for an hour.

    After an hour cut the dough in squares and keep them in the fridge.

  3. Baked, raw- I’m a sucker for all things apple…including these bars! I’ve never actually tried cashew cream but I am intrigued now! Cashews are freely available in Mumbai so I might just be able to get my hands on some. While I do like raw goods, I have a soft spot for baked goods- there’s something magical about baked goods straight out the oven ;)!

  6. Cookies. Always cookies. And when it comes to raw vs baked goods, I’m going to have to cheat and go with both. There are a tonne of simple raw desserts that I love, and a tonne of baked goods that I love — I wouldn’t be willing to go without either 😛

    of course the first vegan food that comes to my mind is hummus, LOL. i love hummus and any other bean dips. i love all medditeranean food and dips and they all tend to be vegan coincidentally! thank you for this, my heart is filled with excitement. can’t wait to nosh 🙂 xoxox

  9. What is this cashew crème you speak of? I feel like I need to know more about this. After all crème is in the name which means it must be good. I want to throw things down my gullet. That is all.
