Chestnut Chocolate Chunk Cookies

15. December 2014 by swissfitchick

Good morning! Welcome to Monday’s party!

There is absolutely NOTHING I can tell you from my weekend rather than me being in a flu coma for 84 hours. I am not joking, I was shut out from real life from Thursday night through to Sunday night with a horrible flu. I spare you with details. I looked like shit during all this time too, obviously. Sorry to show it, but I am of the opinion that a real blog consists of real pictures as well.

Momma was a little worried (read: to death) – I am hardly ever sick and the one in the family who is always healthy, fit and loud. Seeing me laying there not speaking a word but trembling and sneezing made her wanting to call the emergency.

What I dislike the most when being under the weather is cancelling my plans. We all know by now my level of activity is fairly high and of course I had plans for this weekend – which all failed. I am the last person to cancel appointments, so this is feels very uncomfortable for me, but I didn’t have the slightest chance. Only the thought of getting dressed or sitting in a restaurant made all my organs and brain turn. So I was confined to bed as if I had to protect money under my mattress (I wish), slept 50% of the time and watched movie after movie.

Despite my delirium and being filled up to the brim with 24 different chemicals, I invented two recipes!! One of them I share with you today, cause what else could I write. They actually turned out fabulous. What can I say? Mental clarity is overrated. While baking, I was clearly having my head resting on the table more than I care to admit. And hey – when I come to think of it, I didn’t even taste test cookie dough. This is the clearest sign of me being sick, no doubt about that.

BUT, here you go.

These cookies are gluten-free and almost paleo 🙂 The dark chocolate obviously is not paleo. I love the big chocolate chunks in them – I am the person who hates ‘Chocolate Chip Cookies’ in which you find ONE tiny crumb of burned chocolate. I know this guy does too, he actually drummed the idea into my head of the giant chunks here. I added WHOLE nuts – because I was lazy and cause it tastes fantastic. Win.

The chestnut flour gives them an amazing nutty/fall-y/rich flavor and paired with bananas and chocolate, I guess this goes into the group #strangebutgood.

100g chestnut flour

200g almond flour

3 eggs

180g bananas

1 tsp ground vanilla

2 tbsp stevia powder

1 tsp baking powder

350g dark chocolate broken in chunks

200g mixed whole nuts

Preheat oven to 200°C.

Mix flours, vanilla, baking powder and stevia.

Add in bananas and eggs, puree with the hand blender until well combined and creamy.

Stir in nuts and chocolate chunks.

Form cookies on a baking sheet with a big tablespoon.

Bake for 15-20 minutes.

Happy Monday friends!!

When was the last time you were forced to stay in bed for days?

Do you like Johnny Depp? No worries if not, then there’s more for me 🙂

Favorite Cookie?

  2. First things first, you can never take a bad photo my dear. You are gorgeous! Secondly, I hope you’ve started feeling better. I do still wish we lived closer so we could have watched trash tv & ate cookies together all weekend. Third & final, those cookies look so gooey & delicious!

  3. Ohh no hope you are feeling better, love…it’s so frustrating being ill, especially when it involves cancelling plans but I’m glad you have some crazily delicious cookies to keep your spirits high :)! These look amazing- so creative to use chestnut flour- I never even knew it existed but apparently there’s a flour from just about anything…have you heard of/tried banana flour?? My favourite cookie is a toss between frozen chocolate chip cookies or warm snickerdoodle cookies..I do love a good oatmeal raisin cookie too :)!

Johnny Depp can’t be your secret husband, as he’s MY secret husband 🙂

You’re still looking gorgeous even with the flu!! Get well soon. xxx

  7. Can I please look that good when I am sick? 🙂 It sucks getting sick, I think it is the only time I start to dread my bed! I love chestnuts but I have never had them in a cookie! I love Johnny Depp specially as Jack Sparrow..:)

  8. These look amazing!! Will try and hunt out some chestnut flour!
Hope you feel better soon, not nice being sick at this time of year but you did the right thing with resting and you should be right as rain before we know it! 🙂

okay first of all, you poor thing! so sorry you’ve not been well… but you look amazing. how do you take such good pics while feeling shit? this is a gift, i promise. not all of us can pull of the ‘angelic beauty’ look when feeling crappy 😉
we have those days, all of us. my last episode was in may after the last ironman i did, i just was exhausted and elated at the same time. a few days of netflix and meds was the cure!
your recipe looks insanely DELICIOUS!!!! i must try it, especially since i have all but the chestnut flour. maybe i’ll improvise and use something else.
take care of you, big hugs!!! xox

    • Aw, thank you! I didn’t feel very angelic, I can tell you 🙂
I wish we had Netflix! Thank God for Johnny…..
You can use a different flour, no problem – you can sub the chestnut flour with almond or oatflour!

  10. Canceling plans is totally the worst part of being sick! I hope those cookies healed you. If I get sick you will make me some too? I’m Christmas baking this weekend. We should have a Skype bake date. LOL!

  11. I had no idea chestnut flour was a thing! Good to know. And for the record, you’re beautiful even when you’re sick 😉 I hope you’re feeling better though! ❤

  12. I’m starting to wonder how many wives Johnny has because… he’s my secret husband too 😉 And I hope you’re feeling better, lovely ❤ I can't remember the last time I was sick, sick to the point where I had to stay in bed, but I'm probably one of the most miserable sick people there is.

    Happy Monday to you!

  15. Mmm, I’ve never tried chestnut flour before. I’m always wanting to try new things though so I’m interested in how it’d taste in cookies!

  16. Bridget says:

I was confined to a bed for 3 days with an awful infection. The worst of it was not being able to go for my daily run!
I think my favorite cookie is a perfectly baked snicker doodle

    Awww feel better!!! ❤

  18. Argh, how did I miss this! Hope your feeling well my beauty! Of course you baked when you were unwell. you’re such a twat. That’s why you are awesome. And chestnut flour? Stop saying Switzerland has nothing! You guys are secretly Whole Foods.

    • Hahaha. You are the one single person on Earth who I love for calling me a twat.
Seriously, I saw this the first time at the Whole Foods store and I was completely irritated. That’s why I had to buy it – even though it costed as much as one filling of my fridge!

  19. Sometimes our bodies force us to rest when we need it. Then again, sometimes we just catch the worst shit from a coworker. I really do hope you’re fully mended now because this sounds awful. At least, you were consoled with chocolate chunks.

  20. […] again my Chestnut Chocolate Chunk Cookies. They are probably one of the best recipes I ever invented, hands […]

Who thought I would ever write again. Link in Bio. ‚'In essence, love is the consistent embodiment of care, compassion, kindness, and joy toward yourself, your partner, and each other as two interconnected and supported beings. If you encounter those feelings, you can't work around your own vulnerability.

But: there is one emotion that is stronger than fear, and that is forgiveness. For power is never simply a possession but an exercise; power is about how we understand ourselves. If we can forgive, we can let go. If we can let go, we can detach. If we can detach, we find happiness.' #blogger #heartstories #detachment #happiness
