Let’s curse over the soccer game. And eat Peanut Bacon Mini Muffins with Broccoli/Cheese Spread

10. June 2014 by swissfitchick

A RECIPE that is #strangebutgood for sure.

On Thursday the Soccer World Cup starts. This is a huge happening here in Europe and we are all excited. Yep – I am the fad soccer fan who nobody likes – I like soccer when it’s summer, public viewing everywhere, tons of people, fun, events, socializing, staring at handsome and too young players, being out and yelling / cursing / screaming about all things soccer. It’s the rare time when all of a sudden I like and drink beer and when I listen carefully to discussions about soccer and still don’t get it. When the World Cup/European Championship is over, I am not interested in soccer anymore and I have no friggin’ idea who is playing what and when and why. Yeah, that chick.

MuffinsBut hey, it’s also about food. Between all that yelling or WHILE yelling we need to fuel the excitement, right? I was contacted by Michael from Ad Rank to create a recipe for a World Cup Recipe Round Up and me to be the Switzerland representative.

Cheese – because well, we are the cheese kings and queens. And bacon – because it is part of the traditional Swiss Cheese Pie. Peanut Butter – well, I just made that up to make it strange.

MuffinsSo here’s my recipe – which, if I dare to mention is a creation after WEEKS AND WEEKS without a recipe. SO saaaarrreeeyyyyy. I was SO lazy in the kitchen, egg microwave mugcakes, baked chicken/fish and prewashed salads was all I could create.

This recipe is great when you crave something hearty, savory and rich but on the healthier side. You have healthy fats (except maybe the cheese, but cheese is cheese, c’mon), protein and good carbs and even vegetables combined. Pair it with beer. It tastes even better.

Ok, so here we go. Oh, wait – for people with Peanut allergy: The Peanut Butter and Peanut Flour can of course subbed by Almond Butter and Almond Flour. Muffins

Peanut Bacon Mini Muffins with Broccoli Cheese Spread

I have been playing soccer since I was 4! I love it! Although I love playing way more than watching but I can’t wait to keep track of all the games! Wish I could be in Brazil!

    • Really??!! Oh wow that is so cool!! You need to teach me the rules, I always embarrass myself like crazy!!

      • ranchcookie says:

Haha it probably drives other people crazy too :)! Got any questions I’m your girl! Just let me know lol best one to research is offsides if you don’t know what that is!

  2. Haha I’m so that chick about the World Cup too! Any excuse to drink and curse right!? We can taunt each other when (if?!) England and Sweden play each other 😉 Those muffins look SO good btw – pb & bacon & cheese? All good things!

  3. Fellow fad soccer fans unite! Let’s just meet up, pretend we knew what was going on but actually just waiting for goals, gushing over hot players [usually not from Germany but I don’t know about the Swiss team] and eating snack foods.
You know I’m not up for bacon but I’ve tried a certain strange but good host’s vegan bacon bits and feel they’d make a good sub in your recipe. Peanut + salty [un]bacon? Yes, please.

  4. This is why we need to be hanging out during Fifa- It’s the only time I like soccer lol….I just go with the winning team.

This recipe though…after your creations, laura’s creations and well…anything it looks completely normal. But delicious. Savoury + Sweet? Yes.

  5. I don’t actually follow soccer at all, which is kind of blasphemy considering my heavy European heritage. Oops. But what can I say? The Canadianness took over and I’m a hockey fan to my bones. Although even that’s starting to wane — I guess the sports freak in me is just dying? At least when it comes to watching on TV! I love going to games and -playing- sports, but not so much sitting on my couch and yelling at the TV 😆

    • I, on the other hand have no – and I mean NO clue about hockey. I actually watched a game a few weeks ago with a guy and he had to explain me EVERYTHING. I think he regret the decision to watch the game together with me….. 🙂

  6. mmmm…muffins. I definitely don’t follow soccer. Which is ok but I don’t think it’s all that big here…although I played it when I was a kid. I don’t even watch hockey, which is horrible for he whole “I’m Canadian” thing. Actually, the only pro sport I watch is football (NFL) which doesn’t have any Canadian teams. Oops.

    • Oh well, Switzerland is so bad for the most part in these competitions, I always feel kind of odd to be a fan.
And Football? I don’t even know if Swiss people know what Football is. I have a vague idea of it cause of a few fellow bloggers who are obsessed. LOL.

  7. Definitely strange… I guess I’ll have to trust you on the good 🙂 My friend is actually in Brazil volunteering for the world cup! So cool.

Wow, those look…healthy! Probably delicious as well. I don’t think I’ve had a savoury muffin before, but when I was little I would devour those extra large Costco muffins – my favourite was chocolate and poppy seed (let’s face it – it was basically cake).
I’m an even worse fan than you – I don’t like any spectator sports, soccer included! Sports fans all hate me.

    • Hahahaaaaa, sports fans hate me too! I’m so bad at watching this stuff. No patience and no knowledge.
I want that Costco muffin!! It sounds like heaven = cake!!

  9. I’d be popping these babies like candy! I love the added peanut flour. You’re so clever! Joshua and I LOVE watching the world cup.. and like you, won’t watch much more soccer after that.Surprisingly, were huge Germany fans! Well, unless were talking women soccer, than it’salways always going to be usa!! miss you ❤

  10. Khushboo says:

SO excited for the World Cup to start too. I don’t normally watch soccer but these tournaments are an exception- the atmosphere is contagious. These look yummy, especially as muffins always conjure up a sweet treat for me 🙂

  11. Peanut four AND bacon?! You know I’ll be making this #strangebutgood-ness!!!

  12. Kierston says:

This looks awesome! Definitely #strangebutgood combo that I know I’d love 🙂 Thanks for linking up to this recipe on #RECIPEFRIDAY!

  14. My Hubby would love it if I got all into soccer even if it was just during the World Cup. GOOOAAALLLL. Instead I spent last night watching the Housewives of Orange County while he went and watched the USA game. Ha.

Who thought I would ever write again. Link in Bio. ‚'In essence, love is the consistent embodiment of care, compassion, kindness, and joy toward yourself, your partner, and each other as two interconnected and supported beings. If you encounter those feelings, you can't work around your own vulnerability.

But: there is one emotion that is stronger than fear, and that is forgiveness. For power is never simply a possession but an exercise; power is about how we understand ourselves. If we can forgive, we can let go. If we can let go, we can detach. If we can detach, we find happiness.' #blogger #heartstories #detachment #happiness
