It’s What I Ate Wednesday!!

WIAWbuttonI don’t know about you, but….I am excited today. Why? It’s my last day at work until TUESDAY!! Tonight, I will drive off to a road trip with Mom to Czechoslovakia. WTF, you ask? My Mom’s BF is Czech, and he owns a house very close to Prague. Now he stays here and works, while we go there on a Ladies-Sports-Wellness-Shopping-Prosecco vacation. I don’t complain.

WAIT. That’s not all. Since last Wednesday, I’ve been waiting for the decision on an appartment I was looking at to rent. AND. I. GOT. IT. It is one of the most beautiful and perfect appartments I ever looked at for me and they picked ME!!!!!!! I am OVER the moon. Guys – the kitchen is as big as my current appartment. HUGE. Country-shabby-chic-style. A dream. With big windows and a big balcony right there and tons tons of light. I will be able to go back to the times when I hosted legendary kitchen parties at home with the neighbourhood and all my friends. (Don’t judge me for thinking about partying prior to cooking).

But before I we get all too excited here, I join in on today’s WIAW – thank you Jenn for this weekly host!!

I will present my meals from Sunday, cause somehow they did not fit in my Monday post.

Soooo, Sunday. I slept in until about 8:30 and then went through my morning routine – yes, I even do this on weekends. A little preworkout snack……

I had my workout date with Vanessa at 10 am – we went for an 8k run and then practised handstands and Double Unders (Jump Rope) in the street. I added a little WOD later with 3 rounds of squats, pushups, single unders and sprints. I know, I posted this pic already on Monday, but you have to look at it again. HandstandYou and I can NOT even believe how ready I was for breakfast after:

Then I did things…..ya know these days when time goes by and 2 hours later you feel you were busy, but somehow forgot what you did? No? Ok, then it’s me getting older or blonder. Anyway – I guess it included blog-reading/work, laundry and so. (Gosh…)

The important thing is, that I had lunch in the middle of the day. Do you have those days when lunch happens at 3:30 pm? No? Ok, I am officially weird. But who cares about my weirdness when I tell you about this delicious omelette I made….

It was soooo good, and it MUST happen again soon! And YES, I love the burnt touch on it! I actually thought about making a video tutorial for omelettes. Who wants to come and film me? (Silence)


Ok, sorry. Then you will have to make your omelettes on your own……

After ‘lunch’, I met up with a friend to have some important chats and tea/coffee in the sun. It was 20Β°C outside and I could smell summer!! good_morning_coffeeDinner was a holy mess of white fish, veggies and plain minced tomatoes, aka tomato sauce.Fish, VeggiesNope, this wasn’t the end of the day yet. I made sure I get my chocolate bomb in for the day. Cacao Stevia Quark with Almond Butter and 1-3 pieces of my all time favorite dark chocolate (this one is actually meant for cooking, but I eat it like this.) Did I mention I am not normal?IMG_1806 ChocolateHave a fantastic day sweeties!

Are you sure you don’t want to make a video of me while I cook an omelette? I swear I’ll behave (as much as I know how to).

What do you eat preworkout IF you do? I normally don’t, but 10am is too late in the day not to eat beforehand.

  1. I just made an omelette for dinner! I will totally come and film you, mine never look as pretty as yours!!

    Pre/post workout snacks are my struggles at the moment…usually a banana but feeling the need for more protein and the idea of taking a boiled egg with me makes me shudder :/

    Dark dark dark πŸ˜€ speaking of chocolate *scuttles off to the kitchen*

    • Hahaha, oh Pip, I love you πŸ™‚ I could use some dark chocolate right now as well!

      Hardboiled eggs aren’t my favorite either, what I do I bake some protein muffins for the week, so I have them for pre/post workout! You can include the banana – perfect!

  2. So happy for you, lady! I have to admit that the kitchen was one of the reasons I loved my current place as well πŸ˜‰ You better be giving us a home tour when you get it! And I don’t really discriminate when it comes to chocolate, but I will say that milk kind of owns my heart… I loooove that it melts in your mouth. Omg. Want. Now.

    • Oh I will totally do that!! I can not wait until all is set and looking nice….
      I love milk chocolate too. Currently I am more on a dark kick, but that is until the white bunnies make their appearance here πŸ™‚

  3. WAHOO- Congrats on the new apartment, Lucie…that’s fantastic news!! Hope you cracked into a bottle of Prosecco to celebrate.

    Love how hearty your omelets always look so PLEASE make a tutorial- flipping ’em is always so hit or miss for me!! Cooking chocolate or not, chocolate is chocolate so keep eating! While I hate to discriminate, dark chocolate ranks top for me! Especially after doing Whole30, I find milk & white a bit too sweet….that said, I still eat them if dark is not an option ha :)!

  4. CONGRATS !! You so deserve that apartment!!:) I love your approach to eating and health. It’s spot on with foods I love and how I bake/cook/view food. I don’t eat meat or eggs, but still love how healthy you eat and how much you use coconut!:) Plus, you’re the first person that actually has me intrigued to eat quark. Unfortunately, you can’t find it anywhere around here:( Oh well! I’ll look at yours and dream instead:)

      Quark is very similar to greek yogurt, so maybe just try that with cacao and stevia – so good!!

    • Yes you did honey!! It’s YOUR idea actually. But currently I really need someone to film me since I am single again. AND I will probably wait until I moved into my huge kitchen so I have enough space to freak and mess around.
      I will do a recap for sure! I love it there!!

Haha when Eric and I were searching for our current place, the first thing I would look at was the kitchen πŸ˜‰ there was another apartment that we really liked, but the kitchen was the size of a closet so…that one didn’t pan out πŸ˜‰ And I’m making omelettes for dinner tonight! Now I wish I had asparagus…love the idea of throwing that in an omelet!

  8. I used to always be a white chocolate fan but now I am a DARK chocolate fan not sure what happened and its def not for health reasons but dark chocolate and me are BFF’s πŸ™‚ Have fun with your Mom on your girls trip and enjoy lots of champs! Lots of Love C

  10. Would you please stop teasing me with asparagus?! Thanks to you I was -this- close to buying that imported-from-Spain but reduced price green asparagus. If only I wasn’t heading to my parents’ tomorrow with hardly any time to use up a whole bundle.
    And I already let you know but it bears repeating: I’m so happyyyy [cue Pharrell Williams] for you getting the apartment! We need to make plans for a visit and have an epic cooking session in that kitchen. I – no, all of us – need to see pictures come June! Or earlier if possible.

    • Don’t tell anyone, but most of the asparagus I buy is imported – I know it’s not good to buy it, but I just love it too much 😦
      And thank you lady – I agree, we MUST meet up and cook some epic vegan stuff!! With a little cheese on top! πŸ™‚

  12. I can’t wait to see pics of this new apartment! It sounds perfect for you! A big kitchen is definitely a requirement for me when I get my first one. That omelet – oh lord. I mean as long as it tastes good! haha I thought maybe you battered and deep fried it? hahaha

  14. Does the tuna in the omelet not taste funky? I’ve never thought about doing that. Salmon is a typical thing to go with eggs, but I’ve just never thought about tuna. Hmm I might have to try that out. Your breakfast looks so delicious.
