Good morning! Oatmeal Bake

Breakfast is served!! Enjoy with me this delicious and easy to make Oatmeal Recipe. You will love it. It’s cake for breakfast. You don’t like cake for breakfast? WHO are you???

It’s glutenfree and dairyfree – and it contains what we need for a balanced meal – carbs, protein, fat and fibre. And it’s sweet. I feel the urge to strengthen my resolution that cake is good for you in the morning. Ok, I think I would eat this just as well for lunch and for dinner and snack. #cakeformeallday

Trust me on this – it is healthy!!

Oat Bake

Coconut Berry Oatmeal Bake (makes 2-3 servings) Oatmeal Bake

Ingredients: 

2 eggs

4 eggwhites

200g blueberries

60g glutenfree Jumbo Oats

40g Coconut Flour

2 tbsp flaxseed

1 – 1,5 dl water

1tsp coconut oil

Cinnamon, nutmeg, vanilla

Preparation: 

Preheat oven to 220°C.

Grease a casserole with coconut oil.

Mix all the ingredients together and stir well – add the water at the end and use as much as you need to make it semi-liquid.

Pour the mixture into the casserole and bake for 20-30 minutes.

You can certainly pimp it by using or adding banana, nuts, avocado, a grated apple, dried fruit…..use your creativity.

  4. Cake for me all day too please! This looks incredible, Lucie. And I love that it uses oats and coconut flour — just like the bowl of oats that I’m hopelessly addicted to. I’d probably I with banana though, since it’s the fruit love of my life, and then top it all off with a big blob of AB 😀

  7. Blueberries, oats, coconut flour – if it wasn’t for the eggs I’d say you created this recipe with me in mind. And with the amount of eggs it’d be hard to veganize. Either way, though, this looks like a tasty breakfast.
    Oatmeal topping-wise my favourite is almond AND coconut butter on cocoa banana oat bran. Why pick just one nut butter when you can go with both?!

    • I totally mix up the nutbutters too – pure bliss!
      Is oatbran Haferkleie? How do you get full by that? It seems like so thin and substanceless to me…..though I love to put it in my pancakes.

      • Yes, it is and it is SO saturating. I never feel fully satisfied by oatmeal but oat bran is the best :). Not thin at all but thick, creamy and just amazing. Maybe try what I do and add a mashed banana during the cooking process.
