WIAW #55 – #strangebutgood breakfast and Healthy Mini Muffin Recipe

Good morning!

I hope your week is treating you well so far. We are truly blessed with wonderful warm spring weather and I figured I definitely need to to do some shopping – I am a little overwhelmed by how quick the warmth was here now!

But you didn’t come here to listen me babbling about the weather, but because it’s the foodie’s favorite day of the week – Food Stalking Party Day, aka WIAW! Thank you Jenn for hosting it and you guys go and show her some love!

WIAWbuttonToday I show you my eats from Monday and I even got a recipe! The weekend was pretty much soaked in prosecco, though we did have a few healthy meals in between, pimped with some enourmous toblerone chocolate. This meant I was fairly ready for some clean food on Monday.

Breakfast:

As per ususal, my morning cocktail happened – hot lemon water and then acv with a shot of fruit juice, plus supplements.

I went for a short run outside to fire up my metabolism while the sun came out! So happy it’s not pitchblack anymore in the mornings.

I cooked up something reeeeeally #strangebutgood guys – a spinach banana omelett. I just couldn’t decide whether I wanted sweet or savory, so I did both. And I swear it’s good. Spinach hasn’t that strong taste, so the banana took over and it was a delicious breakfast!Spinach Banana Omelett

I made a huge one, so it lasted for 2 mornings.Prep

Lunch was a snack plate!! With all the snack plates I saw around in the blogger world lately, I was craving one for so long now. It was ok, but it definitely needs more fun to be added! Next time, next time.Snack Plate

But hey, at least, dessert was fun. I mixed an egg with some chufa flour, cacao powder and stevia and placed it in the microwave. Then cut it up and covered it with coconut butter. HMMMMM.Mug Cake

I went to the gym after work and did Day 1 of Week 7 from James Wilsons program…..omg. I am glad I survived – seriously. Crossfit this morning will be accompanied by a LOT of soreness!!

Dinner was pretty random again: I filled a plate with greens – roasted asparagus in rapeseed oil and nutritional yeast plus cucumber and some savory quark dip on the side (unpictured).Asparagus

To end the day on a sweet note, I demolished one of my last goodies of the package from a lovely blend.Quest

And that’s it for today! Now on to the recipe – a sweet and light snack/dessert. They are so perfect to prep ahead and have ready throughout the week! The recipe is inspired by the Muffin tops from Kierston.Muffins

Healthy Blueberry/Apple Mini Muffins

Ingredients for 24 Minis:

130g oats (glutenfree for me)

2 scoops vanilla protein powder

2 eggs

3 eggwhites

1 medium apple grated

100g blueberries

5 – 8g stevia

cinnamon

vanilla

baking powderMuffins

Blend all the ingredients, pour in the muffin pan and bake for 20 minutes on 200°C.Muffins Muffins Muffins

  1. Oh my gosh I’m dying! These look amazing! A definite must make;) Those little mini blueberry muffins that came three in a pack from the vending machines were my fave in middle school. Obviously I dont touch those, but these look exactly like them! Thank you for sharing, will be making these ASAP!;)

  4. Sweet OR savoury? Um…both? I think the idea of a banana in an omelette sounds delicious- you’ve sparked my interest!

    Snack plates are the biggest thing right now- they give you the option to try it all. And hello..waiting on that ‘ugly’ recipe from monday. Ugly in the eye of the beholder.

  5. While I’ve never had a snack plate as a meal before those I’ve seen on other blogs are seriously intriguing. If seasons/ ingredient availabilty didn’t matter right now I’d – yes, a little strange but good action here, too – have some of my grandma’s ‘Rotkohl’, steamed asparagus, crunchy peanut butter, hummus, some cucumber and a crunchy apple. And chickpeas, always chickpeas. Don’t blame me for the randomness. You asked at just the wrong time because I’m at the office and basically in snack mode. Only I don’t have a lot of these things in my bag. Awesome… Be sorry for my colleagues😉.
    Send me a plate of that roasted asparagus?! Why is it not in season around here yet??

  6. Snack plates are the love of my life, but they definitely need to be done right to keep me satisfied… And they always, always have to have something sweet on them. And speaking of sweet, that’s definitely my choice for breakfast as well😀

  7. mmm…muffins. I’m definitely a sweets person, especially for breakfast! I’ll admit, I’m intrigued by the idea of putting a banana in an omelette!

    Ooooh these muffins look SO yummy! That omelette sounds awesome. I’m more of a sweet breakfast person but sometimes I’ll crave savory!
