Sugarfree & Raw Lemon-Coconut-Protein-Bars

I quit buying protein bars.

Seriously, I was addicted to Quest and Think Think Bars and if they were available in a store here, I would probably buy one once in a while. But ordering them and paying a ridiculous shipping fee, only to eat them when I’m bored – no thanks.

Instead, I made another homemade version and YES, they turned out really good. They are glutenfree, dairy free, sugar free and combine a wonderful flavor combo – lemon and coconut. If you know me, you know I need some chocolate in just about everything I cook. Except omelettes (expect a video tutorial soon!). SO, these include chocolate as well. Look.

60g (3 tbsp) coconut flour

2 scoops protein powder (I used vanilla from Growing Naturals)

dash of salt

1 lemon

5 packs of stevia or sweetener of your choice

2 tbsp almond butter

1 tbsp coconut oil

55g (3 tbsp) unsweetened chocolate chips

water as needed


Mix dry ingredients together, including the chocolate chips.

Grate the zest of the lemon and stir in.

Squeeze the juice of half of the lemon and add.

Mix in almond butter, coconut oil and stevia.

Mix very well and once nicely combined, start to knead the dough with your hands. Add water as needed – but be careful, it needs to be quite dry!

Spread the dough into a flat tupperware and place in the fridge for about an hour.

Cut into bars and enjoy. Side note: You could of course form BALLS if you prefer that……

Store in the fridge!

I really love the lemon taste, and it’s so good together with the coconut flour and oil.

They are the best to store in the fridge, but you can also carry them in your purse, no problem, they get a little softer, but they won’t melt.

  1. I’m glad that someone else thinks that everything is better with chocolate…because it’s 100% true πŸ˜‰ and I need to get better with making protein bars at home! I do love Quest bars, but I try not to buy them too often…they’re damn pricey!

    This sounds like a delightful recipe! I am trying to cut myself off from the Quest bars (which are unfortunately very easy for me to purchase) because they make me retain water, and generally make me kind of fluffy when I eat too many. I will have to try making this version.

  4. A big NAY to storebought bars — but thats mostly because I can’t eat most of them because of my allergies πŸ˜† They’re definitely crazy expensive though, so it’s nice to save some money there. And homemade bars are so easy to make, that there’s really no excuse. These look wonderful, girl, and I love that they use both coconut flour AND chocolate πŸ˜‰

  5. I’m all about making my own bars, balls (hehe) and snacks but sometimes the convenience of buying them is so worth it! I used to buy all.the.bars but now I just stick to Larabars because they don’t have gunk ingredients. Favorite snack is banana and PB of course! Love that you added lemon to these… lemon and coconut is heavenly.

    Woo! They look so … ‘cakey’ almost (and I mean that in a good sense!) πŸ™‚ Like the base of cheesecake, that sort of crumbly yet moist texture. Love that they’re lemon too, getting me some of my shortbread fix πŸ˜‰

    I’m really am not a protein bar person, at all. Some seem to have more ingredients than a five course meal, and I’d rather know what’s going into it. These however are a different story πŸ˜›

  10. LUCIE! I am exactly like you- I was all Quest or Thinkthin bars, and whilst they are good…..they are NOT cheap!!

    This recipe looks just as good as when you posted it on instagram! I have never tried lemon with coconut but If you say it’s good….it must be πŸ˜‰ Growing naturals can do no wrong! I was always skeptical with vegan powders but it’s been awesome!

  11. Holy balls these look good!!! Not the most eloquent way to put it but I can’t find the words to express how amazing these look. And yes I have a protein bar buying problem which I am trying to work on too!

      The good thing is that protein bars are hardly available here in the stores – so I just have to stop order them and I’m good πŸ™‚

  19. What did you do here?? I’m the totally untypical blogger being not [I -know-] a fan of bars [or balls ;)] but these are right up my alley. Coconut flour, almond butter, chocolate chips – yeees! I totally wouldn’t mind you bringing some along next week ;).
    Oh, and by the way: where do you get the Growing Naturals powder and unsweetened chocolate chips?

    • Haha, let’s make a deal, I bring some bars and you bring cake! The only down thing is, that both the bars and cake would be a big mess until they arrive at our meet up on Sunday πŸ™‚
      Growing Naturals I order at vitacost = expensive. The unsweetened chocolate chips are from Xucker and I order them at!
