A very quick check in to share some of my new recipe I teased you with yesterday! 

This recipe is inspired by Khushboo’s Oatmeal Flatbread. I made a small twist and in the end turned it into a healthier pizza. It’s man approved!

Homemade Coconut Flatbread 

Flatbread Ingredients (for 1 flatbread)

2 tbs glutenfree oats (that’s for me, you can use normal ones)

1 tbsp coconut flour

1 eggwhite

a dash of salt&pepper

Preparation: 

Mix all the ingredients.

Heat up a skillet medium heat.

Pour the batter into the skillet and spread evenly – cook for 4-5 minutes each side until crispy.

IMG_2447Of course it tastes even better when smothered with almond butter…..

Flatbread Flatbread Now if you want to turn this snack into a meal, then why not just add your favorite pizza toppings and throw it into the oven? That’s what I did for the man. The bread was done and I just topped it with tomato sauce, mozarella and mushrooms and placed it in the oven for about 15 minutes. Wonderful crispy glutenfree, proteinpacked pizzacrust. And SO #strangebutgood.

  1. Given my obsession with coconut flour and how much I enjoyed Khushboo’s original flatbread this sounds like a winner to me! Minus the eggs😉. Using it as a pizza crust is a great idea.

  3. I have yet to try Khushboo’s original flatbread, but seeing as I’m sort of obsessed with coconut flour at the moment, this recipe looks pretty perfect. And I’d normally say that I prefer it sweet, but I’ve been eating so many cookies and brownies lately that I’m getting kind of sugared out. Pizza sounds sort of fabulous right about now…

    I’m not sure about coconut flour though – does it have a strong flavour? I could see using it in a sweet breakfast style recipe for something, but with pizza I’d be after something savoury.

    All time favourite pizza topping is cheese. That’s all. It is the ONLY time when I think veggies are not necessary😛 Just give me the cheese.

    One of my old friends has a wood-oven pizza outdoors, and whenever we’d go to her place, she would make the most insanely delicious creations! It’s never been able to compare since. Maybe only Italy will be able to out do them😛

    • It does have a pretty strong flavor, but seeing myself as a #strangebutgood freak, I like it. I would recommend to add some grated cheese or more salt and pepper to make it more savory.
      Oh my Gosh – wood oven pizza is the BEST!!!

  6. Love this!! This is why I made the cheese and garlic version of it- its like a pizza without the need to turn on the oven.

    I might be in the minority here but my favourite pizza topping is shrimp.. or any seafood really. So good!

    Delicious- and great pics- so appetising! Favourite pizza toppings are- sharp cheese, tomato and olives- just simple :)- ooh and eggplant! I think I would want this both ways- you make both look too good to just try one version! Sweet I think would be great with a bit of butter and honey or jam personally and maybe some cream cheese with the jam version🙂 or banana and peanut butter🙂 Thanks for sharing you angel

  8. bah….between you, Arman, and Khushboo, I really need to try making a flatbread! I love the addition of coconut flour in your version. And turning it into a homemade pizza is pretty brilliant! Or just adding nut butter…maaaaaaybe with some chocolate tossed up in there :-p

  9. This flatbread looks so good! I love the pizza you made from it. I just need to get coconut flour so I can make this recipe! I have a question though, are old fashioned oats not gluten free? I buy old fashioned oats, and the ingredients list only says “oats” so I just thought they were gluten free since it does say wheat or anything of the sort.

    • Yay, I hope you’re going to like it!
      Honestly – I don’t know. The oats I buy here in Switzerland are definitely not gf, but I don’t know about old fashioned….I buy a special brand from a gf store.
