A very quick check in to share some of my new recipe I teased you with yesterday!
This recipe is inspired by Khushboo’s Oatmeal Flatbread. I made a small twist and in the end turned it into a healthier pizza. It’s man approved!
Homemade Coconut Flatbread
2 tbs glutenfree oats (that’s for me, you can use normal ones)
1 tbsp coconut flour
a dash of salt&pepper
Mix all the ingredients.
Heat up a skillet medium heat.
Pour the batter into the skillet and spread evenly – cook for 4-5 minutes each side until crispy.
Now if you want to turn this snack into a meal, then why not just add your favorite pizza toppings and throw it into the oven? That’s what I did for the man. The bread was done and I just topped it with tomato sauce, mozarella and mushrooms and placed it in the oven for about 15 minutes. Wonderful crispy glutenfree, proteinpacked pizzacrust. And SO #strangebutgood.
I also see an ab&jelly sandwich here……or cut it in crackers and dip in guac….or as dessert with healthy chocolate dip! It’s so versatile – any more ideas??
