WIAW#45 – Weekend Food and Pumpkin Porridge Recipe

Hmmm. Apple-Pumpkin-Porridge. Believe me guys, you want it. It’s light. Fluffy. Filling. Warm. Pumpkin. Cinnamon. Apple. Carbs. And if you want, Nutbutter and Chocolate. Convinced? Good. Cause the recipe will be at the end of this post!

Let’s jump into the Wednesday Foodparty, thanks to Jenn and her cutest little chickpea!

wiaw what i ate wednesday button happy healthy holidaysSo today’s eats are from the weekend! More precisely from Sunday. As you may have read, Sandro and I went for a run on Sunday morning. But before we went off, I squeezed in a heavy weight lifting session (yes, I have some iron at home) – so because of that, I needed some fuel beforehand.

The run was amazing, the weather was so beautiful as were the views along the lake.

IMG_5789 IMG_5793I wasn’t hungry yet after finishing the workout and chilled on the couch for a while, reading blogs. When hunger kicked in, I rushed into the kitchen and prepared my favorite lunch – a wrap.IMG_2364 IMG_2360

I just spiced up some quark (greek yogurt will do) with chives, garlic powder, salt&pepper and mixed it with the spinach. added cold chicken and stuffed a Oatmeal Flax Tortilla with it. Sooooo good.

IMG_1236Later in the day we went off to take photos of the christmas lights in the dark. After walking, lying around on the streets and benches to catch the perfect angle for 90 minutes, we were FREEZING and ready for dinner. We spoiled ourselves with a huge seafood and fish platter! We grabbed out the table grill and called it a feast.

IMG_8672 IMG_8677 image imageThe pieces were quite small, so it wasn’t as much as it looks like πŸ™‚ I love indoor grilling!

I collapsed on the couch soon after finishing the last bite and munched on my favorite nighttime snack: 1/2 spoonful of each: Homemade Gingerbread Almond Butter, homemade Cacao Coconut Almond Butter and Carob Chips.

And as promised, here’s the recipe for my breakfast:

3 eggwhites

120g pumpkinpuree (if you don’t have puree, buy cooked pumpkin and mash, or roast one and mash)

1 small apple chopped in small pieces

1/3 cups of oats

1 tbsp ground flax

1/2 dl water

2 tsp cinnamon

1 tsp nutmeg


Mix all the ingredients together.

Heat up a skillet on medium heat and spray with cooking spray.

Pour the mixture into the skillet and cook while slightly stirring until fluffy.

Top with desired toppings – I used remaining apple slices,Β raw cacao and stevia.

  1. Not gonna lie… I may have skipped right to the recipe — but I went back and read your post after! Those oats though… my gawl do they sound good. And your photography is looking awesome, girl! Does kabocha count as a winter vegetable? And bananas as a fruit? Because those are the things that I’m currently seriously obsessing over.

    PS – SO jealous over your weather…

    Lucie, this is a request: please stop posting such beautiful looking porridge/oats. I am so envious! πŸ˜€ They look so amazing, and if there is one thing I want to order of iHerb (aside from peanut flour) it raw cacao! It sounds soooo good. I’m a bit of a chocolate fiend – my christmas advent calendar has left me with a desire for more πŸ˜‰

    • Haha, well I guess you just have to make the porridge then you know why it is necessary to take pics and post them πŸ™‚
      I go through raw cacao like it’s my job – seriously, I put it into and on top of everything!

  3. I love that seafood platter grilling meal….my ideal kind of meal 100%! When I visited Japan, we often had to cook our own food at some traditional restaurants- I loved it! And so true- it looks like so much at the start but its not THAT much in the end πŸ˜‰

    Yum! Indoor barbecue is a great idea! I grill sausages inside a lot if that counts :). Fav winter veg- parsnip- baked in with honey! Fav winter fruit- pears? Poached with ice cream and chocolate sauce for preference :). I would so love to visit your beautiful county one day- stunning, just like you :).

  7. The apple pumpkin porridge sounds really delightful! I do something similar with apple and carrots – it’s kind of a carrot cake breakfast and I love it dearly, though recently nothing could beat the pb nana combination. But you reminded me to bring it back πŸ˜‰

    I just tried egg white oats for the first time a few weeks ago and I’m addicted!!! I’ve been having mine with PB2 and no sugar added strawberry jam mixed in. I’ve been looking for different mix-ins and since I love both apple and pumpkin, I’ll definitely be trying your recipe.

  11. I love the idea of an indoor grill! I’ve never used one (or seen one) before, but it sounds fabulous. I love grilling, but schlepping outside in the cold to operate said grill just seems painful sometimes — so obviously, an indoor grill is the perfect solution. πŸ™‚

    It sounds like you had a fabulous weekend (and OMG, the run along the lake sounds phenomenal)!

  13. Having a seafood grill sounds like all kind of perfect. I’ll need to try that! My parent’s have a closed-in deck in the winter, so whenever I’m craving anything grilled I head over there for dinner πŸ˜‰
