Hmmm. Apple-Pumpkin-Porridge. Believe me guys, you want it. It’s light. Fluffy. Filling. Warm. Pumpkin. Cinnamon. Apple. Carbs. And if you want, Nutbutter and Chocolate. Convinced? Good. Cause the recipe will be at the end of this post!
Let’s jump into the Wednesday Foodparty, thanks to Jenn and her cutest little chickpea!
So today’s eats are from the weekend! More precisely from Sunday. As you may have read, Sandro and I went for a run on Sunday morning. But before we went off, I squeezed in a heavy weight lifting session (yes, I have some iron at home) – so because of that, I needed some fuel beforehand.
The run was amazing, the weather was so beautiful as were the views along the lake.
I just spiced up some quark (greek yogurt will do) with chives, garlic powder, salt&pepper and mixed it with the spinach. added cold chicken and stuffed a Oatmeal Flax Tortilla with it. Sooooo good.
Dessert was this sweet baby….
Later in the day we went off to take photos of the christmas lights in the dark. After walking, lying around on the streets and benches to catch the perfect angle for 90 minutes, we were FREEZING and ready for dinner. We spoiled ourselves with a huge seafood and fish platter! We grabbed out the table grill and called it a feast.
I collapsed on the couch soon after finishing the last bite and munched on my favorite nighttime snack: 1/2 spoonful of each: Homemade Gingerbread Almond Butter, homemade Cacao Coconut Almond Butter and Carob Chips.
And as promised, here’s the recipe for my breakfast:
120g pumpkinpuree (if you don’t have puree, buy cooked pumpkin and mash, or roast one and mash)
1 small apple chopped in small pieces
1/3 cups of oats
1 tbsp ground flax
1/2 dl water
2 tsp cinnamon
1 tsp nutmeg
Mix all the ingredients together.
Heat up a skillet on medium heat and spray with cooking spray.
Pour the mixture into the skillet and cook while slightly stirring until fluffy.
Top with desired toppings – I used remaining apple slices, raw cacao and stevia.
