Hey guys!

Happy Thanksgiving to my American friends!

Since everyone is eating Turkey this week, I though it might be a good idea to collect some of my non-Thanksgiving recipes together and show you my favorites. I picked them in a ‘meal-to-meal’ order: Today – BREAKFAST. Lunch, Dinner and Snacks/Desserts will follow!

Now let’s start with my obsession. Eggy Oats. I eat it almost every single day. Since MONTHS. And I am still not sick of it.

oats

25g oats (glutenfree for me)

3 eggwhites

1dl water

2tsp cinnamon

1 tbsp ground flax

Mix everything together and cook in a skillet until fluffy.

Top with all the non-optional goodies like berries, almond butter, apple sauce, more cinnamon, chocholate chips, dried fruit, banana slices…..

We all know I love to have my pancakes on days off. It’s just something about having time in the morning and sitting down to a stack of these delicious babies. And because it’s still pumpkin and squash season – you will love these!

You like it more savory? Try my Spinach Oatmeal Omelette. You will totally freak out on how quick this is to make!!

Oatmeal OmeletteOn the go? Hey, you can pack breakfast in your handbag, no joke! Just bake it the night before (or a big batch for the whole week) and you’re set.

Oh and believe me….my magic bullet is magic and makes an even quicker breakfast – a smoothie.

This one is REALLY old, still from my old old blog, but I actually had the most repins of that one despite the nasty picture!!

PumpkinSmoothieLast but not least, the pancake recipe I make the MOST – and recently made a little twist to turn them into FUDGE pancakes. The basic recipe is here – the Oatbran Quark Pancakes.

If you like it a little richer (and yummier), make the twist with Almond- or Peanut Butter. 

fudgeAnd now….rush into the kitchen if you’re not sitting with a turkey and GET ON COOKING! You must know that I am a friend of QUICK AND HEALTHY recipes, so don’t worry – you won’t spend hours and hours with you apron on. Except you burn your microwave like I did….but that’s a story for another day🙂

    I eat during the week my overnight oatmeal. With lots of fruits, seeds and a bit of peanut butter😉
    Weekends is more breads or omelette! So I am going to try your omelette very soon!!!
