Happy marvelous in my Monday! Thanks to our favorite diva for hosting!
Most important thing first – I made more nutbutter. Dark side: my Food Processor died. At least I think it did. I might try again next weekend – maybe with some kind of weird miracle of technology it will wake up again – hey, who knows? If not – then I need a Pre-Christmas Present e-f-f-i-n-g SOON!
Thank God it died AFTER I made all this #nutbutterporn:
Homemade Gingerbread Almond Butter:
- Crushed Almonds
- Ginger Bread Spice (or: cinnamon, aniseed, pepper, nutmeg and cloves)
- PROCESS (if possible, not until your processor dies.)
AND I made some plain and pure Coconut-Almond-Butter (Grated Coconut & Crushed Almonds – PROCESS) which I must say, is my personal favorite so far.
I guess we are good with nutbutters for a few weeks….do I have a problem?

Oatmeal Cheesecrackers. We had them as an appetizer with some prosecco on Friday night, and….YES. SO GOOD. Let me know if you want the recipe.
Peanut Butter Fudge Pancakes with chocolatized yogurt. Do I need to say more? Recipe maybe? And a closer look?
Crustless Chicken or Tuna Quiche. I think I ate this three (THREE) times this weekend. And yes, I ate the whole by myself. I can not BELIEVE how easy it is! And light!! Let me know if you want the recipe.
Heather’s Pumpkin Cornbread. Don’t worry – this recipe will be up on her blog today. And you better run into the kitchen and make it RIIIIIIIGHT away. Seriously, I had to stuff 7 strong peppermint chewing gums into my mouth to prevent me from eating the whole batch in one sitting. It IS to die for (you probably guessed so by now)! One note – I did not have cornmeal on hand, so I used peanut flour. So it’s Pumpkin Peanut Bread and, did I already tell you…..right. TDF. Sorry.
Uhm, yes, I did some other stuff than demolishing my kitchen. I went to the outdoor Bootcamp class (in the COLD!!!), lifted weights at home, AND I also made my own Spinning class at home.
I went on a date night with Sandro – we had dinner at Steinfels. We shared salmon crostini to start:
And then I had a California Salad with baked salmon (MORE salmon??). I think I had this several times before and was never disapointed (despite the horrible light). Here are Papaya, Cottage Cheese, Caramelized Pecan Nuts, Cucumber, Salmon, Baby Tomatoes on a huge bed of greens.
We then went to the cinemas.
I almost ran across the cinema
doing a perfect dive roll to lick touch the screen. Sandro refused to talk to me after this movie. Haha. 🙂
Wait, the movie was called THOR – The Dark World. Just in case you were interested.
I wore my own armor – now I just need a sword and Nathalie Portman’s lips.
Second date was the next morning at 10am!
I loooooove Ice Skating! And Sandro could take revenge on me for my drooling over Chris Hemsworth’s muscles the night before. He is far better than me in Ice Skating. So mean, I mean seriously.
We took a break after 1 hour of skating to have breakfast. I brought my oats, which I infused with some Spirulina powder. I think I need to limit this version for eating at home, cause…..I mean, we all know that ugly food tastes best, but this one, now seriously…..THIS crosses the limits of grossness.
I ate it anyway.
Another break to wash down the last bits of oats in my teeth….sorry TMI.
Last kitchen errands on Sunday: I did Amanda’s Double Chocolate Mug Cakes, but I made them in a jar and in the oven – what a PERFECT little birthday or christmas present! Add a little glitter and a candle and there you have it.
And yes, I SOAKED this one in chocolate sauce. It was for Sandro’s parents, I hope they liked it!!
