Perfect Pancakes – Guest Post

Lindsay is opening the secret about perfect pancakes today. She is not only a GREAT COOK, but also the creator of the famous Healthy Bites and an amazingly inspirational blogger for me! I can highly recommend to follow her over at CotterCrunch!



I have a confession. It took me 30 years to find a “PERFECT PANCAKE” recipe. You know the ones that are fluffy, healthy, and easy to flip? I’ve tried protein pancakes, egg free pancakes, oatmeal pancakes. Heck, I even tried the ready-made batter (gluten free) and still ended up either burning them or flipping them too soon. Pancake crumbles still taste good though.

Anyway, a few weeks ago I found a grain free recipe that looked promising. I tweaked it, or what I like to call “cotterizing,” then gave it a whirl. Batter was smooth; pan was hot, now it was just up to me to wait patiently to flip!




image-32So what makes a perfect pancake? My answer today is different than if you asked me 10 years ago.

The perfect pancake is one that suitable to your dietary needs (we aim for low lactose and of course gluten free). The perfect pancake has a balance of good fat and carbohydrates (that’s why I used at least 1 whole egg and natural carbs from the banana). The perfect pancake has a good source of fiber (coconut flour has a great source of fiber. The banana does as well). The perfect pancake taste buttery yet slightly sweet (butter extract, vanilla extract, maybe a little stevia or honey, and Vanilla Corepower help!).  The perfect pancake is shared with loved ones, enjoyed on a SLOOOOOOOW morning, savored with a cup of coffee.

  3. Perfect is the right word- I love using coconut flour for pancakes- they add such amazing texture!

  4. Looks great! I have tried all kinds of pancakes. My focus is usually on the toppings! I made banana foster pancakes with agave, bananas, and a little coconut sugar.

No filter. And no one ever tells me again bullshit like that CrossFit makes me look like a man. Left side, 1998 (19y), ~60kg, in an abusive relationship, fueled by a daily dangerous skinny drug cocktail which almost killed me and hours of cardio, no lifting and an oh so fucked up mindset. Right side, 19 years later today (39y), ~68kg (~8kg gainzzz!!). Recovered from 20 years of extreme disordered eating and drugs; and passionate about CrossFit. A healthy mind (pretty much at least 😏😉), a healthy body, freedom and a joy of life I had never experienced before. To be alive and healthy is a fucking miracle. I've always been a stubborn kid and I never half-assed things - contrary, I went and still go full-ass with everything I did and do - which also led me to extreme addictions. But it also allowed me to fight through suicidal thoughts and hurdles. Yet, if you want to overcome something so incredibly strong and stubborn like an Eating Disorder you have to be stronger and more stubborn and to want it with all your heart and to give everything you got. If you are willing to let go in favour of your health, then get your shit together, you can do it. It's possible, I'm the living proof. Trust your strength and never stop believing. And for fucks sake, no one ever goes trying to make me feel embarrassed about my muscles again. I'm not.
