A Marvelous Monday to you all!
Ok, I will try to keep this post short and sweet, cause you know, I will be off today for vacation….and I may or may not will spend 2 nights away from the beach house in this hotel…
Ok, there’s no doubt really. I will.
But before I go, I provide you with a promised recipe from last week – pancakes! I worked on the recipe a bit and this weekend it did the trick. They didn’t fall apart, they had the perfect consistency and the perfect taste. Go, drool.
Kabocha Squash Protein Pancakes – glutenfree (1 serving of 3 small pancakes)
150g roasted kabocha squash (a little overbaked is even better)
1/3 cup oatflour (glutenfree oats processed in flour)
1 scoop vanilla protein powder (natural or chocolate are fine too – I took Sunwarrior Blend Vanilla)
1/2 tsp baking powder
1 tsp cinnamon
1 tbsp powdered stevia
1 dash sea salt
1 dash nutmeg
You could do this professional like mixing all the dry, then mixing all the wet and then put together – I was impatient, so…
Put all the ingredients in a blender and mash/blend/mix.
Heat up a skillet on medium heat.
Spray the skillet with cooking spray or wipe with a paper soaked in coconut oil.
Pour 1/3 of the batter into it, cook for 2-3 minutes on each side and flip.
Repeat with the other 2/3 of the batter.
Be patient! They need the time to be cooked through and don’t get messed up or stay raw on the inside (trust me, this all happened here before).
Top with Coconut Syrup Sauce:
1 tbsp coconut flour
1 tbsp sugarfree maple syrup
water to thin down
Mix and decorate your pancake
eat the rest with spoon to mouth.
Indulge and go to heaven.
Friday night I went with one of my Bestie’s to the Sunrise Avenue concert. If you don’t know these guys (they’re European – from Finland), I highly recommend listening to their album – this voice….this voice is just AMAZING.
I had to get up early the next day for an appointment and I felt like it was the middle of the night. I didn’t really get to bed early the whole week – so that’s also why I definitely need a holiday now. I am sleep deprived and my clumsiness gets even worse when I run low on sleep. Considering that I am already clumsy in a normal state, this is a little disaster. Let’s be honest, I am in my mid-thirties and I can not handle a whole week with only 6 hours of sleep – these times are definitely over.
Despite that, the weather was beautiful and it was a nice journey through our pretty country.
Especially with a good breakfast in front of me.
When I arrived in Zurich after lunch, I found this behind the doorstep…..
Sandro was out until Sunday and left me this vacation love note and a Spaghetti Squash 🙂 he knows me. The arrow is a towel hanger we saw in a catalogue and I loved it!
And then I went to bed. Yup. I could hardly keep my eyes open so a nap had to happen. I think naps should turn into my new hobby – so good. After that, I went for a long walk in the forest behind our house. Walks are my activity when I have my restday and I always love it so much. It’s so nice to be out and slow with time to admire the beauty around me.
Sunday morning I lifted some weights and joined the Outdoor Bootcamp which was a lovely start of the day. Then I had my pancakes. Sorry, I have to show them again…
And then I overpacked. Again. I don’t know if the day will come when I pack JUST the things I actually NEED. Saying that, I really think I need all this stuff. I mean, how can you know what happens? I just want to be prepared for anything. Fair enough, right?
I worked a few hours on my blog too to set up all the guest posts I will be hosting during my time off. Be sure you check in, I have some brilliant, amazing and funny people writing for me – I am VERY excited to present them all to you!!
Besides that, I will probably unplug as much as possible. I want to concentrate on some quality time with the man, on my free time and just enjoy the days as they come. I will definitely post here and there or check in on Instagram, but if I don’t comment or reply to emails as much, please forgive me – I’ll be back in 2 weeks!
