WIAW#37 – What I ate Wednesday – Just another manic Monday

Good morning!

It’s midweek, Wednesday and it’s WIAW – What I ate Wednesday as we all know. Thank you Jenn for hosting again and keeping up partying with us in the blogger community with the little chickpea!

Let’s talk a little about my Mondays. This is kind of how I feel on Mondays:

On Monday morning I always travel back from my ‘weekend-home’ Zurich to my ‘work-home’ Basel. Being away for the whole weekend means my fridge is EMPTY – and that is a state I can not accept in my kitchen. So instead of doing a relaxing grocery shopping tour on the weekend, I have to do it either when I arrive in Basel (before work), or over lunchtime. And it always looks like this….

IMG_4897Yeah. And you bet my handbag hangs on the handlebar. Well, this is how life looks like when you don’t have a car. May I mention that it rained?

So after being up for 2 hours and 45 minutes and still no food yet, I am more than starving when arriving at the office. And if there is no appropriate bag to be found, my food is transported in my handbag. I am classy like that.

IMG_0603I prepped my eggy strawberry oats:

IMG_1173And thank GOD I remembered the last second, that I might would want some kabocha squash for breakfast.

Even better.

Even better.

Eggy Oats were the breakfast topic of the week anyway.

With Berries.

With Berries.

With spinach as a savory omelette version.

With apple sauce and yogurt.

With apple sauce and yogurt.

I felt stressed out and couldn’t wait to lay down on my Yoga Mat at lunchtime. There is a 60 minutes Power Yoga class at the studio very close to my office and it was SO needed – my body thanked me.

Lunch was leftovers from the weekend:

Garlic Chicken, more Kabocha Squash, Broccoli

And here is my lunch from Tuesday:

Shirataki Noodle Bowl with codfish, spinach and avocado

Dessert/Snack – if you eat this, you know you are in Switzerland.

Swiss Army Chocolate. Simple but good.

Swiss Army Chocolate. Simple but good.

I can not remember which dinner I had on Monday night, so I show you both pics. Either of them was on Tuesday. So when coming home, I first threw part of my groceries into the oven to prepare my food for the week….

Yes, that’s ALL for myself! I wanted to add more, but clearly this tray is packed.

….and then I sat down for maybe saffron chicken with mushrooms, spinach and avocado…..

IMG_1142….or was it roasted chickenbreast with baked sweet potato and spinach?

Anyway, the best part of all the last few days was snacking on my obsession. Crack with Crack Kabocha Squash with Protein Chocolate Dip. Recipe coming on Friday!

Happy Wednesday Lovelies!

Do you always remember what you ate on certain days? I totaly get confused, I have a TON of foodpics on my phone, iPad and camera and have no idea when I ate all that. Freaky.

How do you grocery shop? By car? Bike? Public Transport?

What was your breakfast this morning?

  1. As always I want to come over and have breakfast/lunch/dinner with you. Well, I’ll even leave the meat part for you so that’s a fair deal, right?
Good question on remembering meals. It has actually gotten a lot better since starting to blog and partcipate in WIAW because I take pictures of almost all of my lunches and snacks.
Guess what?! Breakfast this morning was kabocha with your protein chocolate dip :). Thanks for sharing! Sorry to ask for yet another recipe but: I haven’t been able to get that picture of your saffron chicken out of my head anymore after seeing it this often. I’d obviously have to make a vegan sub for the chicken but I’m sure the sauce alone is amazing.
Happy Wednesday, Lucie – hopefully not a rainy one!

    • You are alway welcome here!!
Yay, you made the chocolate dip!! It’s so good, right? And the saffron recipe is totally easy too, I am sure it is delicious with tofu or tempeh too. it’s 1 dl coconut milk, 1/2 tsp dijon mustard, 1 package saffron, a little sea salt, pepper and parika. If possible, marinate it for about an hour, or just cook it in it. So good!

  2. What type of seasoning/sauce do you use for that saffron chicken? I would love to try making a vegetarian version with tofu or tempeh!

    • It’s 1 dl coconut milk, 1/2 tsp dijon mustard, 1 package saffron, a little sea salt, pepper and parika mixed together. If possible, marinate it for about an hour, or just cook it in it. I bet it’s delicious with tofu or tempeh too!

  3. I love lunchtime workouts as well. Isn’t it nice to clear your head during the middle of the day?

  4. Oh what I would do for some Swiss chocolate IN Switzerland- lord knows I get my fair share out of the country ;)! Food aside, every day seems to jumble into on and it’s difficult to pinpoint what I ddi on any specific day without thinking hard! I’m currently eating breakfast which includes plain yogurt with raw oats, peanut butter, applesauce & almonds- my fave combo!

  5. Oh girl, HUGE props for being able to get your groceries done with a bike. I do that on occasion, but most bigger trips require a car. Or I just walk if I only have a few things to grab. And it’s honestly nice to see someone who’s as obsessed with kabocha as I am… I’ve had some for dinner pretty much every night since I got back from HLS, and I don’t see that love affair ending any time soon. It’s just so pillowy and delicious. Ugh! Looking forward to hearing about your chocolate sauce!

    • Yes, it is a bit of a hassle with the bike, but I have no choice, so I just have to go with it πŸ™‚
And yes – I am completely addicted to kabocha. It’s the same like with the Almond Butter – I have no idea how I survived without it before!

  6. Ok, that eggy oatmeal omelette- I need that recipe! It looks absolutely amazing!

Great job on doing all your shopping on a bike- I think if I ever considered that, It’ll be the worlds smallest grocery run πŸ˜‰

I tend to forget what I ate if its too far in the past, but over the last week or so, I’m alright with it! And kabocha with everything is the ONLY way to go! Breakfast this morning was raisin toast with lurpak butter and an egg and cheddar scramble. Then after I made it I craved pancakes. Fail.

    Hi Lucie!

How brave you are to do the grocery shopping by bike! I definitely need my car for this, especially I always end up buying way to much food for only 2 people!
Breakfast was overnight oatmeal with rasperries and fresh figues. Love it!
I also tend to Forget what I am eating but my meals definitely have or avocados, sweet potatoes or pumpkin!
It’s great you can do some yoga during lunch time! Would love to! I can only workout in the morning or after work.
    Have a great day!

    • Believe me, I would love to take the car! Sometimes it would be so much more convenient. On the other hand, going by bike prevents me from hoarding all the food πŸ™‚
Your breakfast sounds so fresh, yumm!

  8. Swiss Chocolate delight YUM! I love reading your eats and I have now purchased a Komocha squash because of you! Can not wait to toast that bad boy up! I have been walking with my groceries and making it my cardio day, its a sweaty long journey but killing two birds with one stone is something I do best! Lots of Love your way C

  9. I shop with two kids! lol. It’s a great luxury when I get to go alone and I usually spend hours there! But usually it’s a grab and go without losing a child or buying something they throw in the cart.

  10. This post made me hungry! Now I want oatmeal too πŸ™‚ So many delicious things!

  11. Great, now I have that song stuck in my head, haha. Just another Manic Monday… ohhhh-ohh.. wish it was Sunday… ohhh-oh.

  13. Your eggy bowls look so good! I had Oatmeal Protein Bites this morning…and pretty much every morning!

  14. seriously impressed that you do your grocery shopping via bike. I shop for two people, so I would most definitely be running out of room! I had a protein pancake with banana slices and Justin’s Chocolate Hazelnut for breakfast…it was pretty wonderful πŸ˜‰

  15. Lisa says:

Loving all this kabocha in your post. Pretty much addicted to that squash. And I’m in awe that you can grocery shop on a bike. Seriously I have enough trouble bringing all my bags to my car.
    Everything looks delicious!

  16. Sloane says:

YES. I can’t wait for the squash sauce recipe. Ugh. I can’t deal with how much I love kabocha.

Your Mondays sound CARAZAYYY. I feel your pain girl, but you are doing awesome! And I hear ya on the yoga midday thing. Sometimes you just gotta get revved up for the rest of your day.

As usual your eats are super droolworthy. I need to try some of your recipes πŸ™‚

  17. Juli says:

This roasted chickenbreast with baked sweet potato and spinach dish looks amazing. I’ve read so much about eggy oats lately. How are you doing them? Just adding an egg to the oatmeal? Thanks πŸ™‚

    • I actually mix water with oats and 3 eggwhites, cinnamon and vanilla and cook it in a skillet as a scramble – so easy and superdelicious!!

      • Juli says:

Thank you. So practically I prep my oats the same way just without the egg whites. But I will try to add some eggs tomorrow. Sounds like a great way to add some protein to my diet πŸ™‚
