WIAW#30 – What I Ate Wednesday – it’s a Leg Day

Good morning!!

Just a quick random thing – since there was no MIMM post on Monday and no pics of the weekend (the wedding of Sandro’s brother), I post very few now – I got them yesterday from the bride! Sandro was best man for his brother and it was a rare moment that day to have him by my side🙂

But now on to the subject of this Wednesday……Welcome to another round of What I Ate Wednesday, the favorite day of us foodies, since we get to stalk everyone’s eats.

Some of you may have seen that the #plantainlove exploded around the blogger world, thanks to the twins aka #plantainqueens! I had a hard time finding some, but last week I was finally successful!

Since Sandro and me are the grill-masters, we threw it on the BBQ, topped with some coconut oil and catfish on the side.

I made a fresh salad with it and added in some apricots – LOVE that fruit currently!!

I used the second one for my ‘brunch’ on Friday morning….

Cinnamon Roasted Plantain Chips, Spinach Eggwhite Omelette

…..and then returned to an old favorite lately for dinner – the Eggie-Shirataki-Zucchetti Bowl.

Dessert were a No-Bake Almond Joy Cookie and one of my Healthy Fudge Brownies:

Unfortunately I did not take my phone to the wedding on the weekend that’s why I have NO pic at all of the marvelous food we had! So I have to bore you with my ordinary meals from Tuesday aka my Leg Day:

Oats-Spinach-Eggwhite Omelette for breakfast – and half of an unpictured grapefruit on the side. I ADORE the combo of eggwhites and oats! Even better sweetened up with cinnamon and vanilla.

Post-Legday-HIIT (Did I mention that leg workouts are the ones I want to be over with asap? – Talk about Love-Hate-Relationship.) Protein Blueberry Smoothie:

Lunch: Chicken marinated in coconut milk and Mc Cornick California Chicken Spice-mix (unpictured) with a side of a small sweet potato and broccoli

Mid-afternoon Snack: Low Fat Curd Cheese with blueberries…

And dinner: Some leftover coconut chicken with brown quinoa, avocado and spinach salad drizzled with a dressing made of olive oil, acv, lemon juice and salad herbs. Super super delicious.

  4. Gorgeous pics of you and Sandro! It’s been a while since I’ve tried plantains but cooking them in coconut oil sounds fabulous! Lately I am all over strawberries- please don’t let berry season end ;)!

    I've never had plantains before, but I'm definitely curious about them. I think what puts me off the most about trying them is the fact that they feel so hard and tough, like unripened bananas, and I'm most definitely not a fan of those. But I'll give it a shot… one day😉 Plain old bananas, on the other hand, I've been eating like crazy. I'm going to turn into a monkey soon.

  7. I’ve had plantains before, but I’ve never cooked them myself – only in chip form or out at restaurants! I’ll have to see what I can do with them at home though.

  8. I’ve made similar plantain chips before but hadn’t thought to grill em – will be doing that for sure!

    Mmmmm yum! Everything here looks so good! Wonderful food choices! My favorite fruit right this moment is grapes. And bananas are always a fave.

  13. I love plantains but can never ever find them! Ever I mean I look every single grocery trip! The wedding looks fabulous, I love going to weddings they are always such a great time!
