It’s midweek and it’s 2 days before I leave for the U.S. excitment is slowly increasing!!

Before I show you my food from this week, I ask you a favor: Anyone who knows New York City and Boston well, PLEASE provide me with your favorite tips! I am looking for fun&great places to see, great restaurants, HEALTHY restaurants or take away’s, gyms, parks or anything that you think we need to see. I’ve been to NYC tons of times in my Swissair worktime, but that is so long ago. So please, fill up the comment section! THANK YOU SO MUCH!!

I don’t consider myself as the most sensible snacker. Either I eat nothing, or hardboiled eggs.

So yeah. Totally lame Not very exciting on this side. I have to say though, that I loved my new spin of sweet eggs, inspired by Sam’s Chocolate Eggwhite ‘Oatmeal’.

Such a delicious start into the day if you ask me. To continue the deliciousness, I whipped up some more Hummus for lunch – and added some currypowder this time. Loved the spice up! Dipping with Edamame and Cucumberslices. Yes.

Foto 2I don’t know when I had this unattractive kind of thing, but it was a snack or a dessert during this week – almond butter cookie dough mess. #uglybutgood ! Believe me, I could live of this. I love it even more with honey instead of stevia and some cacao powder, which tastes like chocolate cookie batter. And now all together: DROOOOOOOOOL!!

And as mentioned in yesterday’s recipe post, I cooked up the Thai Buddha Bowl from Tone it Up for dinner! I added giant prawns, my absolute favorite seafood and protein – and let it simmer a good time in the coconut milk.

Before dinner, I had my weekly appointment with my personal trainer and I was SO ready for this postworkout meal! It tasted superdelicious and since we still have cold weather here, I was perfectly happy and comforted with this bowl. I can really recommend trying it!

    As a fiend of anything coconut-related I’m ashamed to admit it’s been a while since I last cooked with coconut milk. That Buddha bowl looks like a great way to use it for sure and I might have to come up with a create something similar soon.

  6. I adore cooking with coconut milk, but I don’t really think to do it too often…might have to change that next week, it’s so good in soups and curries!

  7. It’s a fact: everything tastes better in bowl form! Yogurt messes are my one of my all-time favorite meals…especially when raw oats, peanut butter and applesauce are involved ;)!

    I wish I could give you the haps for ny and boston but I just don’t know! All I have to say is find a whole foods and a trader joes! You will love those πŸ™‚ also you should check out some farmers markets around town those are always fun to experience! My go to snack right now is hummus so easy and once you get the ingredients to your liking its perfect with peppers carrots and celery! When I need some extra protein I dip chicken in for snack time!   11. 2 days?! Gah! So close! I’m still trying to convince you to make a detour up to Canada while you’re over here πŸ˜‰

    I love coconut milk and use it a lot to cook my grains. Rice is my favorite one, but I have yet to try adding it to oatmeal and seeing how that goes. Oh! And I love mixing it into yogurt for my yogurt messes! Plain yogurt, fruit, nut butters, cereal, and either almond or coconut milk? I’m definitely a happy camper when I’m cleaning up one of those πŸ™‚

      I love the idea of coconut milk in oats, how did I never think of that before??

    Oh gosh, don’t even get me started on coconut milk. I love the stuff. From using it in baked goods, oatmeal bakes, stirfrys, cooking quinoa, hot chocolate. Okay, I’ll stop now.

      And YES for coconut milk everywhere. I really need to try one of your oatmeal bakes with coconut milk soon, always drooling over them! You could always go on, I can not hear enough of these great ideas!

  15. So. Much. Good. Food. !!! I’m definitely going to try the cocoa omelet – yum! Just a year ago I would have though that sweet eggs was the strangest idea ever, but now I LOVE them! I bet this would be delicious with banana, too! Oh, and that Buddha Bowl looks absolutely amazing. I love prawns with coconut milk, so I’m going to have to make that, too. Heck, maybe I’ll just copy your entire day of eats because I’m also digging the almond butter cookie dough. Swooooooon.

    I’m so so excited for your trip, and can’t wait to hear ALL about your adventures in New York and Boston! One of the best restaurants I visited in NYC was Pure Food & Wine. It’s entirely vegan, gluten free, and raw, but oh my heavens, EVERYTHING was amazing! You have to go there! I never knew raw food could be so delicious. Also, be sure to visit Eataly – I spent four hours there, and ate probably a day’s worth of food. It’s an incredible experience (markets, restaurants etc etc). If you can, you should take a class at Soul Cycle…A lot of celebrities workout there, so you may see one! The classes are kind of expensive and you have to reserve a spot in advance, but I’ve heard it’s totally worth it! Oh, and definitely go to Bareburger!! It’s a healthy burger place that offers lettuce-wrap burgers (they have bison, elk and ostrich, which is the leanest meat). I went there in September with Julie (juliegolean), and it was amazing!     Yay! I love and live in Boston! The weather is so amazing right now, and we’re right on the water you can’t go wrong just walking, and walking (and walking!). Run along the Charles River, and try to catch a Red Sox game-the energy of Boston fans is contagious. Happy travels!
