Tuesday Recipes – Green Pancakes

Good morning!

It’s time for breakfast! I can assure you, that this is probably one of the most simple pancake recipe you have ever seen or made. It takes you approximately 10 minutes (max!), and believe me, this small effort pays off! I had them for breakfast on Sunday and they are supertasty. Not only that – I was so thrilled that they turned out so green!! Maybe you dislike the color, then you could add in some cacao-powder….but I love them green.

And because of that, I’d say they fit into the #strangebutgood category….

Ingredients (for 2 large ones or 3 small ones): 

1/2 ripe avocado (or banana)

If you don’t like avocado – you can simply substitute it with a small ripe banana!

3 eggwhites

1 tbsp oatbran

4 drops liquid vanilla stevia or 1 tbsp stevia powder

1 tsp vanilla



Mash avocado together with the eggwhites.

In an other bowl, mix oatbran with vanilla and stevia.

Mix dry and wet ingredients together, whisk well.

Cook in a skillet over medium heat.

Most important: Top with your favorite toppings!


  • Nut butter
  • Protein Frosting
  • Cacao Frosting (Cacao Powder mixed with water and nutbutter)
  • Applesauce
  • Syrup
  • Chopped nuts
  • Chopped Fruit

  4. I love banana pancakes… I’ve never tried to make them with avocado though! I am seriously obsessed with them, so I may just have to make this. Can you taste them at all? Does it taste like a guac pancake?! Hehe.

  6. I’ve seen avocado being used in muffins and cookies before, but never in pancakes. Love the idea, Lucie! I love adding avocado to smoothies and making puddings – it’s just so creamy and decadent! And as for pancake toppings, I’d have to say that maple syrup is my favorite. I’m Canadian, after all 😉

  10. Using avocado instead of banana is such a good idea!! I always feel like my meal doesn’t have enough healthy fats when I make pancakes. These would be perfect!

    So, I was totally expecting spinach-in-pancakes when I saw your “green pancake” title–but this is even better! While I like subbing banana into pancakes, I get tired of things always tasting like banana. Using avocado instead? Genius! And still fabulously healthy.
