Tuesday Recipes – #strangebutgood Sweet Scramble

Good morning!

I serve you breakfast today. Ok, you could also have it for lunch, or dinner. It’s a multipurpose meal. A #strangebutgood one, but I mean REALLY good. It’s sweet, and it contains eggs. Yes, sweet eggs, believe me – it tastes good.

Since I am for another 10 days sticking to the Whole30, there is some creativity required. I played around with the ingredients I had on hand, and out came the

SWEET SCRAMBLE (plus vegan option)



1 egg

3 eggwhites

3 strawberries chopped

1/2 banana diced

1 tsp coconut butter

7-8 walnuts (your choice)

1 tbsp cinnamon

1 tsp cardamom

1 tsp vanilla

1 dash of salt

Optional ingredients: 

Sweet Potato


Dried Fruit


In a medium bowl, beat the egg and eggwhites together with half of the amount of the spices until fluffy. Set aside.

Heat up a skillet on medium heat and spray with cooking spray.

Add the banana plus half of the walnuts (chopped) to the skillet, sprinkle them with the rest of the spices and roast on both sides for 2 minutes.


Add in the eggmix and let cook while stirring very gently for 2-3 minutes and form to a scramble.

Put the scramble into a bowl or on a bowl and top  with the strawberries and rest of the walnuts. Add coconut butter which immediately starts to melt. Hmmmmmmm.

Optional toppings: 

Nut Butter

Unsweetened Apple Sauce

Cacao Powder

If you want to skip the eggs in this recipe, you can replace them with chia eggs. Whisk 1 tbs of ground chia seeds with 3 tbs of water or coconut milk. Give it a few minutes for the mixture to become sticky and egg like. This will give you the equivalent of one egg.

  3. I go for poached or sunny side up eggs most of the time…I like my runny yolks! I will accept a fried egg once in a while though 😉

  7. Umm, considering that I *just* tried sweet eggs for the first time this morning—and that I fell head over heels in LOVE with them—I will definitely be making this scramble! I’m especially intrigued by the caramelized bananas—one of my favorite foods in the entire world. 😀

    I truly adore eggs in all forms, but if I have to choose, I’ll say the omelet is my favorite. I also really love souffles, but they’re a bit too complicated for every day.

    I’m definitely more of a runny yolk lover myself, but really, I’ll take eggs just about any way I can get them!
