Good morning!

As I said in yesterday’s post, I did some experimenting in the kitchen this weekend. Though I did not make up a new recipe, I copied and modified 2 of my favorites on my list. Both came out very well and I can only recommend trying them!

I start with the savory one, this is from Kierston at candyfit.net, the CINNAMON EGGWHITE BITES.  and I wanted to try these for so long. Since I don’t have a mini-muffin-pan (but I MUST have one!!), I used mugs. So it looks like they turned out to be

CINNAMON EGGWHITE CHICKEN MUGCAKES (modified from Kierstons Cinnamon Eggwhite Bites)

Ingredients

7 Egg Whites

1 Egg

1 T Ground Cinnamon

2 T Ground Flax Seeds

200g ground Chicken

Optional ingredients: 

Sweet Potato

Oatmeal

Nuts

Cheese

Chopped dried fruit

Instructions

Pre-heat your oven to bake at 400F

Roast chicken in a skillet on low heat until done

In a bowl, combine eggwhites, egg and chicken

Mix well

Grease 3 mugs with cooking spray or coconut oil

Place in the oven and bake for 20-30 minutes

Remove from oven and enjoy!

The second recipe is a sweet one, actually, it tastes like an incredible dessert. It’s the Simple Chia Seed Pudding from ToneItUp.com and it is REALLY simple and so yummy! I modified one ingredient which made it a little thicker.

SIMPLE CHIA SEED PROTEIN PUDDING

Ingredients

4 Tbs Chia Seeds

1 scoop protein powder (modified ingredient)

2/3 Cup of liquid ~ you can use water, almond milk or coconut milk

Optional additions: Stevia, Cacao powder, cinnamon, vanilla… the possibilities are endless!

Directions

In a bowl mix together chia seeds and liquid of choice. Using a spatula or spoon, mix thoroughly for about 5 minutes until pudding starts to form. Add stevia and protein powder and continue mixing. Place in refrigerator to cool or enjoy at room temperature. You can serve with berries, coconut flakes, toasted almonds or just have it plain! Feel free to adjust liquid to chia ratio depending on how you like it.

I chose coconut milk and added a scoop of vanilla protein powder, ground vanilla and ground cinnamon. If you want to enjoy it as a pudding, you can eat it right away, I decided to have it as a parfait and therefore put it in the fridge for about 2 hours. OH.SO.GOOD.

Milk, yay or nay? If yes – Soy, Almond, Cow or Coconut? 

I am not a huge milk drinker – IF, I use coconut milk or I would use unsweetened almond milk, but I can not get it here in Switzerland.

  4. Cow’s milk does nothing for me – I don’t even buy it anymore. I usually go for unsweetened vanilla (or chocolate) almond milk. So good. I’ve seen chia puddings pop up before, but I’ve never tried them. Might have to give it a shot sometime!

  6. Adding cinnamon to chicken and eggs? As big of a lover of cinnamon as I am, I have to admit that I’ve never really added it to any savory dish. I’m going to have to give it a shot one of these days. And when it comes to milk, I barely ever drink it unless it’s in my cappuccinos, and then I go for regular cow’s.

    • I thought it was weird too in the beginning, but today I am in love with my cinnamon eggwhite scramble in the morning or for dinner (breakfast for dinner is always a winner – yeeeeh, a rhime!!) – it’s really good!!

  7. That protein pudding sounds fabulous. I have been wanting to incorporate chia seeds into my diet, so this sounds like a good way to do it.

    I’m ok with fermented cow milk (cottage cheese,cheese and yogurt) but milk is a big no no.I love goat milk, almond, coconut are good too, but so expensive…

    Chia pudding is a favorite of mine, and I always use almond milk. I can’t stand regular anymore.🙂

    • I totally have to make them again as soon as I have such a Mini-Muffin-Pan! And I feel you – regular cow milk tastes so different today than when I was a child🙂

  10. I love experimenting with weird food! Those chicken mug cakes are a great idea! I have made chia pudding before and I usually do it with almond milk. My favourite kind is when I add almond extract, stevia and cocoa and then top it with berries🙂

  12. Oh so good is right!! The protein chia pudding looks amazing, and I can imagine that the creaminess from the coconut milk really kicks it up a notch. I made a similar version last summer, but used almond milk, so it wasn’t quite as delicious and pudding-like as I’d hoped. I’m definitely going to try your version!

    I used to be a huge regular milk drinker when I was little, but during my teens, I went off it completely. In college, I started drinking soy milk, and then after college, I switched to almond milk, which is what I drink now and use in recipes. Have you ever looked into ordering it online? It might be expensive, but you could probably get a reasonable price from one of the online health food companies!

    I’m so happy you made the egg white bites! They sound unique, but in a very delicious way!

    • I am sure the almond milk version is delicious as well! Ordering almond milk is horrendous because it is heavy and you pay shipping costs according to weight😦
      I want to get a Mini-Muffin-Pan soon so I can make the original eggbites! !

  15. Oh wow, wasn’t expecting the chicken in those muffins! haha! They look like little desserts!

    I can’t do cow’s milk thanks to my somewhat lactose-challenged tummy, but I SWEAR by my unsweetened almond milk…I even like to drink it straight up which most people don’t do!
