As I said in yesterday’s post, I did some experimenting in the kitchen this weekend. Though I did not make up a new recipe, I copied and modified 2 of my favorites on my list. Both came out very well and I can only recommend trying them!
I start with the savory one, this is from Kierston at candyfit.net, the CINNAMON EGGWHITE BITES. and I wanted to try these for so long. Since I don’t have a mini-muffin-pan (but I MUST have one!!), I used mugs. So it looks like they turned out to be
CINNAMON EGGWHITE CHICKEN MUGCAKES (modified from Kierstons Cinnamon Eggwhite Bites)
7 Egg Whites
1 T Ground Cinnamon
2 T Ground Flax Seeds
200g ground Chicken
Chopped dried fruit
Pre-heat your oven to bake at 400F
Roast chicken in a skillet on low heat until done
In a bowl, combine eggwhites, egg and chicken
Grease 3 mugs with cooking spray or coconut oil
Place in the oven and bake for 20-30 minutes
Remove from oven and enjoy!
The second recipe is a sweet one, actually, it tastes like an incredible dessert. It’s the Simple Chia Seed Pudding from ToneItUp.com and it is REALLY simple and so yummy! I modified one ingredient which made it a little thicker.
SIMPLE CHIA SEED PROTEIN PUDDING
4 Tbs Chia Seeds
1 scoop protein powder (modified ingredient)
2/3 Cup of liquid ~ you can use water, almond milk or coconut milk
Optional additions: Stevia, Cacao powder, cinnamon, vanilla… the possibilities are endless!
In a bowl mix together chia seeds and liquid of choice. Using a spatula or spoon, mix thoroughly for about 5 minutes until pudding starts to form. Add stevia and protein powder and continue mixing. Place in refrigerator to cool or enjoy at room temperature. You can serve with berries, coconut flakes, toasted almonds or just have it plain! Feel free to adjust liquid to chia ratio depending on how you like it.
I chose coconut milk and added a scoop of vanilla protein powder, ground vanilla and ground cinnamon. If you want to enjoy it as a pudding, you can eat it right away, I decided to have it as a parfait and therefore put it in the fridge for about 2 hours. OH.SO.GOOD.

Milk, yay or nay? If yes – Soy, Almond, Cow or Coconut?
I am not a huge milk drinker – IF, I use coconut milk or I would use unsweetened almond milk, but I can not get it here in Switzerland.
