Tuesday Recipes – GO GREEN!

So today, I have the easiest yet very delicious recipe for you. If you ever come home and are tired of cooking up something but still want to keep it clean and light, this one is perfect. It takes about 10 minutes from starting until sitting down and digging in!

Let me introduce you to the:

4 eggwhites

2 handful spinach

1 tbsp oatbran or nutritional yeast

Cooking Spray or 1 tsp coconut oil

A dash of each: pepper, oregano, chives


  • Mash/Cutmix the eggwhites with the spinach and the herbs.
  • Mix in the oatbran or nutritional yeast
  • Spray a skillet with cooking spray or melt the coconut oil on middle heat
  • Pour the egg-spinach-mix into the skillet
  • Let cook for about 4 minutes, then fold – cook for 3 minutes, fold again etc, until fully cooked.

    My favorite vegetable…now THAT is impossible to choose. Some favorites: sweet potatoes, brussel sprouts, peas, and carrots :).

    My favourite veggies would be baby carrots. They’re definitely a must have in my household! I also like spinach, tomatoes and bell peppers.

    I still have yet to try my green in anything except smoothies. This sounds pretty easy and delicious though! My favorite veggie is probably broccoli or brussels sprouts, which is crazy because I wouldn’t TOUCH those when I was little. The smell of either cooking was enough to make me sick, but now I eat them ALL the time!

  8. Quck meals are definitely perfect, especially around this time of the year when I don’t want to be spending a lot of time in the kitchen! I think I’d have to say that my favorite veggie at the moment is baby carrots – I just can’t get enough of them!

  10. I’d love this! Spinach is definitely my favorite vegetable—I eat it every day, often three or four times! It’s the most versatile veggie I can think of because it “slips” into almost any dish without being noticed. I like it in omelets, frittatas, soups, stuffed into chicken, or simply sauteed with olive and garlic. ๐Ÿ™‚ Thanks for sharing this, Lucie! Hugs! โค xoxo
