2. April 2013 by swissfitchick

Good morning!!

I have a great breakfast recipe for you! I know, the pumpkin season is more or less over, but they still sell it in the supermarket and I had some at home and wanted to use it up. Out came the……

Ingredients for 2 muffins:

250g mashed pumkin or pumpkin puree

1 scoop vanilla protein powder

1 eggwhite

1/2 tsp organic vanilla powder

2 tbsp oats

1 tsp baking powder

Preheat oven to 170 degrees Celsius.

Mash the pumpkin together with the protein powder, eggwhite, baking powder and vanilla in a large bowl.

Mix under the oats.

Grease 2 muffin forms or 2 mugs.

Bake in the oven for 30 minutes.

IMG_3287 I topped mine with a little low fat greek yogurt mixed with stevia and unsweetened cocoa and called it a meal.

IMG_3291On the inside it was fluffy and soft, perfect!

  6. Oh yum. Hese really do look soft and fluffy! Good thing i keep an emergency can of pumpkin in my pantry at all times. I tend to go through phases with pumpkin… I’ll eat a lot of it and then go without it for a while before remembering how much I enjoy it and going back. It’s strange…

    • Same here! I think I even turned a bit orange in winter because I had pumpkin oats every.single.day. 🙂 Now I was off of it for a few months and when I had that muffin I was really pleased to have it again!

I haven’t tried many new recipes lately, but I did roast a chicken last week, which was a big accomplishment! It’s something that’s always scared me, but it was so so easy. I’m home for a few weeks now, which means I’ll have lots more time to experiment in the kitchen…Any suggestions?! xoxo ❤
