I have a great breakfast recipe for you! I know, the pumpkin season is more or less over, but they still sell it in the supermarket and I had some at home and wanted to use it up. Out came the……
Ingredients for 2 muffins:
250g mashed pumkin or pumpkin puree
1 scoop vanilla protein powder
1/2 tsp organic vanilla powder
2 tbsp oats
1 tsp baking powder
Preheat oven to 170 degrees Celsius.
Mash the pumpkin together with the protein powder, eggwhite, baking powder and vanilla in a large bowl.
Mix under the oats.
Grease 2 muffin forms or 2 mugs.
Bake in the oven for 30 minutes.
