Tuesday Recipes – Tropical Scramble

Hey y’all!

Today’s recipe is not totally made up by me, I was inspired by Amanda and actually just adapted her Pumpkin Mexican Chilli Scramble. It will be posted on Kierston’s Recipe Friday campaign!!!

I wanted to do this last Tuesday for dinner, but  did not have the ingredients on hand, so I changed it slightly and out came the


It is SO simple and easy, great if you want a balanced, warm and light meal that is prepared in no time! And it tastes SO good with the coconut/curry flavor!




3 eggwhites

1/3 can chickpeas

1tbsp curry

1 small shredded zucchini

4 cherry tomatoes

2 tbsp coconut milk

1 tsp of each cinnamon, cumin, pepper

1 tsp coconut oil

1 handful of coconut flakes for topping


Put 2 eggwhites, coconut milk and the spices in a small bowl and beat until fluffy. Set aside.

Mix 1 eggwhite with half amount of the chickpeas and blend until smooth. Set aside.

In a skillet, melt coconut oil on medium heat.

Add zucchini.

Add the mix of eggwhites/coconutmilk/spices plus eggwhite/chickpeas, stir gently and then let cook for 5-8 minutes, covered.

Add cherry tomatoes and rest of chickpeas and let cook for 3 minutes more.

Put in a bowl, top with coconut flakes ot nuts and enjoy!!

  1. Can we have a full day of tropical foods.. my tropical smoothie for breakfast, this for lunch (or dinner).. and um, we need to create other meals for the rest of the day 🙂

    I am more of a “medium” girl. I like some spice but not TOOO much.

  4. Looks delicious, Lucie! Especially with the coconut. I’m such a wimp when it comes to hot food. Not only does my mouth hate it, but my stomach isn’t a big fan either. I figure that we’re already so hot that we just can’t handle any more heat 😉

  8. This looks amazing, Lucie! I love the combination of tropical flavors–especially the coconut oil–with the eggs and chickpeas! Talk about a nutritious AND delicious meal!

    I like my food medium–spicy enough to provide a kick, but not so spicy that my mouth is on fire!! I once bit into a chili at a Thai restaurant, and it was the worst experience! My mouth was burning for four hours afterward! Haha.

    • Oh my GOD!! I hop that never happens to me, I would desperately suffer! I am a medium too, but more on the medium-mild. Lame, but I just like to taste the food and not just the spices….

  9. Oh my gosh girl, this sounds AMAZING!! So many wonderful flavors! Did you use curry paste or powder?

    I am a total WIMP when it comes to spice…I can’t even handle medium salsas! Definitely mild for me! Lol

  10. This sounds freaking amazing! Ahhh I’m such a fan. I’m a mild girl too…spicy foods hurt my belly. I do think, however, that though we eat mild, we ARE hot. 🙂
