I wanted to do this last Tuesday for dinner, but did not have the ingredients on hand, so I changed it slightly and out came the
It is SO simple and easy, great if you want a balanced, warm and light meal that is prepared in no time! And it tastes SO good with the coconut/curry flavor!
1/3 can chickpeas
1 small shredded zucchini
4 cherry tomatoes
2 tbsp coconut milk
1 tsp of each cinnamon, cumin, pepper
1 tsp coconut oil
1 handful of coconut flakes for topping
Put 2 eggwhites, coconut milk and the spices in a small bowl and beat until fluffy. Set aside.
Mix 1 eggwhite with half amount of the chickpeas and blend until smooth. Set aside.
In a skillet, melt coconut oil on medium heat.
Add the mix of eggwhites/coconutmilk/spices plus eggwhite/chickpeas, stir gently and then let cook for 5-8 minutes, covered.
Add cherry tomatoes and rest of chickpeas and let cook for 3 minutes more.
Put in a bowl, top with coconut flakes ot nuts and enjoy!!
