Hello and welcome to Marvelous in my Monday!! To make sure that this week is of to a good start, we are celebrating MIMM hosted by wonderful Katie with Baby G.
Gosh, this weekend seemed like neverending. Other than fun weekends, this weekend was filled with sitting home alone and studying. Eeeeeeeeh. Well, I did not only study of course, in my breaks (which took place a lot :-)) I had other marvelous stuff on my plan. For example baking some Friday morning postworkout breakfast:
I saw Sandro quickly before he left for snowboarding with the guys. He found a new shop a bit outside of Zurich and brought some goodies home:
All three were delicious, yet pretty high caloric and added sugar. So, ideal for a treat once in a while but definitely not a regular item on my meal plan.
I kept it low key on Friday night, created some memory cards for studying and was up and bright on Saturday morning. I cycled straight to the supermarket to get my stuff before the big Saturday crowd arrived.
I saw this recipe for Healthy Chocolate Chip Cookies on Gemma’s YouTube Channel, the recipe comes originally from ChocolateCoveredKatie. When they came out of the oven I tried one, and….oh. SO good. Totally soft on the inside, supertasty and the only ‘sugary’ ingredients are the dates and the few chocolate chips. You would NEVER guess that the main ingredients are …… – CHICKPEAS!!!
Katie’s recipe is a pie, but I like it better as cookies. Saying that, I must admit, the pie looks pretty delish too…..
Breakfast/Lunch needed to happen after!!
I needed to take the chance to watch that when Sandro is not here. He is obviously too cool to watch a chick-flick with me…..:-) I loved it!! It was the perfect movie for me, the couch and my dinner….
Followed by one of the cookies dipped in a mix of 1 tsp Almond Butter wih 1 tsp honey…..hmmmmm.
Sunday morning I woke up and did my normal morning routine – meditation – hot lemon water – workout. I did have a preworkout snack since I slept longer and felt weak and hypogylcemic.
Postworkout meal was a new pancake recipe. A good friend of mine sent it to me, I will post it on Tuesday – it is SO good and light too!
Studying, Meal Prep and a Starbucks-Coffee(Tea)-Date with a good friend happened for the rest of the afternoon…..
I was so glad I met her, I did not talk to anyone for almost 2 days!! AAAH! I felt like I’d go crazy. I mean I am girl and a talker, and the words just started to pile up in my head, they had to be thrown out, haha……:-)
A new recipe was created too…..hmmmmm. I used the mini casserole right for the first time and it was totally worth it. Recipe up on Tuesday!! Look out!
And the last marvelous thing and REALLY MARVELOUS is the weather this week!!! SPRIIIIIIIIING!!!!!!

Do you like to send time alone? I love it, but when it gets too much, it gets too much. I can get very fed up by myself, yup 🙂
