Good morning everyone!

I have a very delicious recipe for you today. You already saw pics of it and when I tasted the first bite, I knew I have to share it with you my readers.

It’s a salmon-vegetable dish, which you can pair with more vegetables or an other of your favorite sides – I’ll make a few suggestions later on.

Marinated Zucchini-Salmon-Wraps

Ingredients (2 servings):

400g fresh salmon filet

1 large zucchini

1 dl coconut milk

1 tbsp mustard

1 tbsp coconut oil

1 tsp salt

1 tbsp lemon pepper

1 tbsp ginger

1 lemon

1 tbsp dill

1 tbsp rosemary

Preparation:

Preheat oven to 180Β°C.

Cut salmon in 2 pieces and put in a plastic bag, set aside.

In a small bowl, whisk the marinade: coconut milk, lemon, ginger, half of the pepper, half of the salt, dill, rosemary, mustard. Stirr well.

Pour half of the marinade in one plastic bag and the other half into the other. Shake well and put in the freezer for at least 1 hour.

Cut the zucchini in thin slices.

Spread with coconut oil, sprinkle with the rest of the salt and lemon pepper.

After marinating, take out the salmon from the freezer and cut it into smaller pieces.

Wrap the zucchini slices around the salmon and fix with a toothpick.

Place zucchini-salmon-wraps in a ovensafe casserole and bake for 15 – 20 minutes.

Take it out of the oven and serve with:

– Asparagus sauteed in coconut milk

or

– Sweet Potato Fries

or

– Black Rice

or

– Potato frittata

or

Scrambled-Cherry-Tomato-Egg

….whatever you crave!!

With the marinade and the baking in the oven the salmon gets really tasty and juicy – YYUMMM!!!

Mine are definitely Eggs and Greens.

I prefer to eat it pure, but this marinade is so so delish!

Is this a bad time to admit that I don’t really like salmon? 😯 I don’t know what it is, but I’ve been turned off from fish for as long as I can remember, and I really wish that wasn’t the case because I know how healthy they are. My parents love them though, and they’re always looking for new recipes so I’ll definitely be sharing yours πŸ™‚

    • Well, I have to say I am really offended now, you were meant to like EVERYTHING I write πŸ™‚ πŸ™‚ NO it’s NEVER a bad time to say how it is!! I mean you can replace the salmon by chicken and do the exact same thing I am sure it will taste delicious too! Or share it with your parents, fantastic – whoever I can make happy I am happy too!

    I always forget about buying salmon at the food store. It looks so good and it’s a nice break from my everyday chicken dinners. My favorite veggie side is snap peas.
