Ok, let’s face it…..it’s Monday!! Thank God Monday is also MIMM time, the marvelous Monday party hosted by beautiful Katie!!

I hope you all had a great weekend. Amanda from Running with Spoons wrote in her post on Sat, that she thinks her life was not very exciting. Well, you can be sure that if there was a competition on who has the most less exciting life, that I would be the sure winner. But I am incredibly happy with my boring life. If I need action, I get some, but normally I am completely satisfied by quite weekends like this…..

Friday was a pretty productive day that consisted of 2 short workouts, laundry, cleaning, work and a great meeting with my trainer and start up plan of our work together. All accompanied by some good meals of course….

Late afternoon I caught the train to Zurich and spent a quite night with Sandro at home and a delicious dinner:

I was pretty exhausted from my boring work-full week and went to bed early. It was wonderful to sleep in – I took a rest day – and only get up for this….

I met a very good friend of mine for lunch later and we spent the afternoon with chatting, strolling around and doing some shopping!

Did I need another pair of Diesel jeans? Probably not....but who cares.....they are just P.E.R.F.E.C.T

She travelled back to Basel in late afternoon and I took a walk along the lake direction home. Sandro was waiting for me with a glass of prosecco and cinema tickets!!! We went to see ‘Django Unchained’ – I LOVE IT.

Quentin is a master. Normally, when a movie is that long (almost 3 hours) you can be sure to find me doozing off and drooling over Sandro’s shoulder. But this time I was wide awake. Because of the movie, but maybe also because of this…

But I mean seriously…..Peanut Butter Cups WHITE???? I am in heaven.

I was ready for a rocking intense workout on Sunday morning followed by a creation from Heather. Please, don’t be mean. I mean, I tried. Heather is unbeatable, I mean she IS the genius and the pancake queen (together with Jessie) but a least she inspired me and I gave it a try. And besides that failure and ugly looking – they tasted delicious!!! No, they are not burned, they contain spinach and cacao (strange, but GOOOOOD) and are supposed to be dark. hmk???!!

Ok then. That wasn’t the last failure on this day. I mean, if you want to create new recipes, you have to do some experiments. I wanted to do vegetable-chicken-burger. The cutting of the chicken went perfectly well since we now have a meat grinder!! As you can see it was the first time I used it and look pretty scared (I was). Sorry for my poor appearance. It was Sunday and I stayed home all day so had no urge for getting glamorous.

I mixed the ground meat with spinach, pumpkin, small amount of oats, an eggwhite and some seeds. Did not work out, it fell apart no matter how long I cooked it in the skillet. Any idea??

At least I was successful with Megs savory chicken thigh muffins and Sara’s Pumpkin-Coconut-Protein-Bars. SO GOOD.

The bars are a great pre-workout snack or a regular snack, or like I did it this morning for breakfast: 2 bars with a bowl of fresh chopped strawberries.

The muffins are a perfect protein side over some roasted veggies of your choice. I did asparagus and cherry tomatoes with 2 muffins on the side. They contain sweet potato, eggwhites, chicken and a small amount of oatflour, so a great nutrient bake.

Any suggestion/recipe for making a good vegetable-chicken-burger that doesn’t fall apart?

  1. hm those bars look great, I have been dying to try to attempt making my own bars. I would try adding more of a base to your vegetable chicken burger, although I am interested to see the recipes that other commenters leave

  2. Happy Monday Lucie! I agree with you–“boring” weekends are best!🙂 it sounds like yours was pretty fantastic, especially because it included zillions of delicious eats (those pancakes! That REECE’S!) and a shopping date with a friend (Diesel jeans really ARE perfect).😀

    I’m so happy you enjoyed the pumpkin bars! They’re one of my favorite on-the-go snacks/meals, so I always bake a batch at the beginning of the week to have on hand. They’re also really yummy topped with peanut butter or almond butter! I’ve been meaning to bake Meg’s savory muffins, too…I have all the ingredients on hand, so it’s now just a matter of making it happen.😉

    I’m glad to hear you liked Django Unchained; I’m hoping to see it before the Academy Awards in a few weeks! Xoxo

    • Ah girl, your bars are already almost gone! I need to make a new batch!🙂
      I am pretty glad that the Reece’s are only available at a shop that is a few k’s away from my house. Otherwise I would be turning into one!🙂
      Let me know how you like Django Unchained. I thought it was a lot serious stuff to think about (the slave issue back in the 1800) but definitely some great laughs too!

  5. Your meals look amazing Lucie! Especially that chocolate pudding with strawberries. I live a pretty simple life too, nothing too crazy is ever happening to me but I kind of love it!

      • Awe thanks so much girl!!! I LOVE them. I don’t even mind to spend a hell of a horrendous amount of money for Diesel Jeans. If it’s Diesel and if it fits, my mind gets blurry. Haha, well, sometimes I have to get away from the food myself🙂 but the more I work with it the less it ‘attacks’ me. Part of the recovery I guess…..and you are always welcome for dinner, breakfast, lunch…..all ready🙂

  7. There’s seriously nothing more marvelous than a pair of jeans that fit just right. I mean, obviously there are, but a good pair of jeans works wonders in the self-confidence department. And you definitely do NOT have a boring life, girl! I mean, who was just in Spain?!😛 And who’s doing some awesome baking/cooking and always trying new things? I rest my case.

  8. I have heard of the white chocolate Reese’s peanut butter cups, but have yet to try them. That picture sure is making me want to change that ASAP!😉
