Tuesday Recipes! Savory sides…..

Good morning!

Back to food! I promised to post the veggie-messes you saw last week on the blog and I also created a new Hummus recipe in Spain. So let’s jump right into it, shall we??

This one here is an adapted version of Shannons mashed cauliflower.

Mashed Cauli-pumpkin-otatoes


1 tbsp coconut oil

2 tsp coconut milk

1 cauliflower

200g pumpkin puree

1 tbsp chives

1 tsp grated garlic

1 tbsp lemon pepper

1 tsp sea salt

1 tbsp curry

1 tsp koriander


Put coconut oil and coconut milk in a bowl and melt/heat it in the microwave or in the oven.

Steam cauliflower until soft.

Heat up pumpkin puree.

Give all these ingredients in a blender and mix until creamy and smooth.

Add the spices in the end and stir well, until combined. Serve in a bowl and decorate with chives.

Enjoy just like this as a ‘soup’ or as a side with your favorite protein! I chose giant prawns!!

You can change this recipe up in so many different ways, so here are a few alternatives:

  • Replace pumpkin with a sweet potato to add fiber and to make it thicker/richer
  • Add broccoli to make it GREEN and to add an extra veggies serving
  • Add red kidney beans to make it more fillingBroccoli-Cauliflower-Soup, Coconut-Chicken Fries, PrawnsSo here’s ANOTHER Hummus recipe – It is so good and perfect if you want an extra veggie boost, because, it is made with…..EGGPLANT!!



1 avocado, ripe, chopped

1 eggplant

1/2 can chickpeas


1 tbsp lemon pepper

1 tbsp oregano

1 tsp seasalt

1 tsp hot curry

Steam/cook eggplant until soft.

Put chickpeas, eggplant and avocado in a blender.

Mix until smooth.

Add spices and stir until well combined.

  2. I’m not a big fan of guac (actually I lied.. i hate it), I’m sure I could sub some laughing cow cheese in place of the guac in the hummus recipe??!! Sounds GREAT!

    • Haha, thanks girl, but I think I am pretty far from a genius 🙂 But it is fun and the cooking gives me peace which was impossible in the past, so this way it’s a double win – good food and relaxation!
