Today I share my weekend creations. My recipes appear when I have the time, which is obviously on weekends. When I am in the rush of the workdays, I do not have the time to experiment and go for my ordinary stuff.

So here we go with a Hummus creation, that can be taken as an appetizer with veggiesticks or the same combo as a snack. I was actually inspired by Kaitlins post where she had Avocado Hummus from Trader Joe’s. Since we do not have TJ here, I decided to create my own. Believe me – it is addicting and supereasy to make!!

Guacamole-Hummus

Ingredients:

1 can chickpeas

1/2 avocado

1/2dl coconut milk

1 tbsp chives

1 tbsp paprika

1 tsp sea salt

1 tbsp pepper

1 dash of chilli

Preparation: 

Put coconut milk, chopped avocado and chickpeas into a blender. Blend until all is well combined and really smooth. Mix in all the spices in the end and stir well.

DONE!!

The second one is a meat creation, and I love it, I had it in my mind for long and now finally got to make it. If you are bored with ordinary chicken breast, this is a great alternative and is a small add of some healthy calories.

Coconut-Chicken-Fries

Ingredients

200g chicken strips or chopped chicken breast (skinless)

1 eggwhite

1 tsp honey

40g oatmeal

2 tbsp grated coconut

1 tbsp curry powder

1 tsp sea salt

1 tbsp pepper

1 tsp coconut oil

Preparation: 

Mix all the spices (curry, salt, pepper) in a small bowl until well comined.

Spread the chicken strips on a foil or sheet and marinate them with the spice mixture. Let them sit for about 20 minutes.

Prepare meanwhile the crust.

Put the oatmeal in a processor and blend until it is flour.

Put the flour in a wide bowl and mix in the grated coconut.

In another wide bowl mix the eggwhite and the honey together.

Place each chicken strip first in the egg-honey-mix and make sure it is covered with the liquid.

Then place it right away in the oat flour-coconut-mix and spin it around until well covered.

You can either bake the fries in the oven (15 minutes, by 200°C) or roast them in a skillet with coconut oil until nicely browned.

If you want more and a richer crust, add more honey and spread the eggwhite-honey-mixture thicker around the meat, so it can hold on to more of the flourmix.

I had them together with my cream-soups –

– and today as leftovers warmed up in a pan with roasted coconut-milk-veggies. BLISS.

  9. Oooo guacamole hummus! I’ve seen that around the blog world as well, but we don’t have a TJ’s in Canada either so I couldn’t get my hands on any and I was considering making some myself. Thank ya for doing all the hard work for me 😀

  11. Oh YUM! Both recipes sound amazing, but that chicken!! I have GOT to make that! I just recently tried Thai (and immediately fell in love) for the first time so this definitely looks like something I would enjoy!

    PS, That avocado is PERFECT! Am I the only one who gets a little giddy every time I slice an avocado and it’s perfectly ripe? 😉
