HAPPY NEW YEAR EVERYONE!! I hope you had a great one!!
Well. Mine pretty much effed up. I started to feeling worse and worse all afternoon yesterday and in the end we had to stay home. It seems to be some kind of a flu, I feel better today, but I wouldn’t have been able to party or even to sleep over somewhere and drink. So we just stayed here, Sandro cooked a little something and we kept it low key. It was sad, cause I was looking forward to the party with the friends, but oh well. I actually just really felt bad for them cause we were all looking forward to celebrate New Year’s Eve together. Now besides that, my phone lived up again and I could safe the pics from the party on Sunday. I was not yet sick at all back then as you can see…..ps. I hope I can get a picture someone took of my boss and me dancing the Gangnam Style. It was hilarious.
Now I will definitely start to do some detoxing today. Even though I did not have parties or events between christmas and New Year’s, except that one on Sunday, I always found a chance to grab a drink somewhere and with someone and so kind of just drank on as if there’d be still christmas, whoooops!! I think my body needs a break and I am looking forward to some easy detoxing and to be coached by Shannon during the whole January!
Now on the some recipes!!! I promised to post the berry tiramisu. Just be aware – it is not a healthy version. But – it is worth every bite!! I will add some possibilities to swap the mascarpone to make it lighter.
500g fresh berries or frozen berries (any kind)
170ml orange juice
2 vanilla beans
5 tbsp brown sugar
Take berries out of the freezer about 2 hours before. If you have fresh berries, wash them and cut them into slices (strawberries).
Cook up the orange juice with 1 tbsp sugar, set aside.
Whip the cream.
Mix together eggyolks, whipped cream, mascarpone, cinnamon and 3 tbsp sugar.
Arrange half of the amount of the ladyfingers in a casserole dish. Sprinkle with the orange juice. Spread half of the mascarpone cream over the ladyfingers until fully covered. Put the rest of the ladyfingers on top of the cream, sprinkle with orange juice. Top everything again with the rest of the berries and add another level of the mascarpone cream.
Place the tiramisu for at least 2 hours in the fridge.
You can replace the mascarpone with either Ricotta, Low Fat Curd Cheese, or Lactosefree Low fat Curd cheese.
You might replace sugar with stevia, I am not sure if it gets the same sweetness in the end though.
Another really delicious recipe I made on the weekend is the
FAJITA PIZZA WITH GREENS, EGGWHITES AND MOZZARELLA:
Ingredients for 4 pizzas:
4 Wholegrain Fajitas
10 brussel sprouts
1 pack of mozzarella
4 hardboiled eggwhites
4 tbsp olive oil
10 cherry tomatoes
4 dashes of: paprika, oregano, garlic, lemon pepper
Preheat oven to 200°C.
Wash and cut brussel sprouts and broccoli into small pieces and place in a pan with cooking water and boil for about 10 minutes.
Meanwhile arrange the Fajitas on a sheet, covered with baking paper.
Spread each of them with 1 tbsp olive oil.
Take the veggies out of the hot water, and arrange them on the 4 fajitas. Cut the cherry tomatoes and add them to the veggies plus one eggwhite for each pizza. Sprinkle with mozzarella chunks, paprika, oregano and garlic.
Put them in the oven and bake for 5-10 minutes on a high level by 200°C.
