Sweet Quinoa. Moms are the best.

Monday after work I decided to head off for a run cause the weather was so beautiful. But when I stepped out the door  the sun was gone! And it got quite chilly immediately. I still went, and took some nice pics of fall. I guess these will be the last runs with weather like this….it is supposed to become winter on the weekend!

 Perfectly right in time my Mom came home from Prague and brought me some winter-running-gear as it is so much cheaper there. I was thrilled!!! She brought me 2 full sets with shirt, jacket, leggins and shorties. I LOVE thumb-holes and PINK. It’s all NIKE. I am ready for my winter workouts!!

As I told you I was trying to cook Quinoa. It worked (a YAY for me!). I did some not very exciting combos with veggies and chicken or veggies and smoked salmon. but then I remembered, that I was in a Surf-and Yogacamp 2 years ago and there we had this freaking delish breakfast with Quinoa every day. I couldn’t wait to try if it was still in my blonde head….and here it is:

QUINOA WITH YOGOURT AND CURRIED MANGO 

Ingredients:

150-200g plain yogurt (or low fat curd cheese, ‘Magerquark’)

1 tablespoon fresh lime juice

2 teaspoons curry powder

1 teaspoon finely grated peeled fresh ginger

1/4 teaspoon black pepper

30g quinoa

chunks of 1 ripe and peeled mango

5-10 leaves of chopped fresh mint

Preparation:

Whisk together yogurt, lime juice, curry powder, ginger, and pepper in a large bowl (you could add some salt if you like that). Rinse Quinoa in a sieve to remove bitterns. Cook quinoa in a pot of boiling water for 10 – 15 minutes. If it’s not done yet, add some more water and cook a few minutes longer. Drain in a large sieve and rinse under cold running water. Toss quinoa with curried yogurt and remaining ingredients in a large bowl. Serve warm or at room temperature. Top with your favorite topping: nutmix, pumpkin seeds, banana slices, aplle slices, berries….. If you would like to swap it to sweet, cut out the spices (ginger, pepper, curry) and add cinnamon, stevia, vanilla and nutmeg instead. Top with your favorite topping (honey, almond butter, dried fruit). Enjoy!!!

Yesterday, Sandro brought me my favorite Japanese dish – seaweed salad! I LOVE it. I had it as a starter followed by my Superwomen Green Smoothie – a green dinner!

Tonight I will do my workout on the VITA PARCOURS http://www.zurichvitaparcours.ch/. I haven’t done this in years. I always just ran the route without stopping at the strength stations. These routes are spreaded all over Switzerland and there’s even an APP for it – will do a research about that today and keep you updated. it’s actually such a great workout for everyone!  Will do that today and try to get some pictures in to post tomorrow!
